What if you do this the night before and put in fridge overnight how would you adjust the cooking times the next day? X

Looks fantastic. Wee tip for oxo cubes if you don’t know it - I hate getting my hands covered in all the dry bits, but if you can pull a wee bit on the foil folded parts of the oxo cube without breaking them, you can squeeze the cube again without breaking it, you can feel it becomes more powdery inside - then tear the corner and just tip the contents out into the pot or jug and no dirty hands

I'm definitely going to follow your prep for roasted meals from now on. I can't this Christmas as I'm cooking lunch at my daughter's (with help, I hope) as there are 12 of us and she has a much bigger kitchen than me. I'm doing a smaller lunch Christmas week for our visitors so I'm going to prep this week and freeze. Thank uou Chell
Happy Christmas to you and yours

Oooh I love this! Just had an idea that I could make this slimming world friendly for during the week when Christmas is over and I’m back on it 100%. What would you recommend doing with the carrots, parsnips and potatoes to make it sw friendly? X

Thanks Michelle. I always thought Brussels had to be blanched before freezing which I hate doing so thank you. I'm off to sort them now.
P.S.Tesco has loads of veg for just 15p a bag, yep 15p. Great to freeze so your vlog came at a perfect time.
