In my creative world experiments I found you don't need double high fences to prevent animal climbing. A bear won't go over a single high fence even if the fence is imbedded into the ground which a player can just walk over(1 block down, will go over if 2 or more deep). It is a bit annoying that drifter thrown stones agro the animals to the players but it does prevent shenanigans...
The reason your 1-block root cellar isn't working is because it needs at least one empty\air block in there for it to count as a cellar. Changing that should update its spoil timer immediately to reflect the cellar bonus.
Using a stick can turn your reed chests into traps for smaller livestock. You need to check back a bit because the trap only keeps an animal alive for 24 hours. Works great on chickens and rabbits. I don’t know if they work for those little black and white goats, but it’s worth a try, as the goats give you plenty of red meat. You can also get milk from them. You do need to separate the ram from the pigs because the pigs will kill him to keep their offspring safe.

The font on the signs doesn’t look like it is hand-written and breaks an immersion a tiny bit. Would it be possible to change a font to something looking more like a chalk/charcoal scribe?
I thought you had to use lime water before tannin.
