  • I think just about every one of our Uk friends has asked me to try my hand at making pasties. So I am finally getting around to it. I hope that I do this Cornish classic justice! Heck I even went and found rutabagas! Thanks to our friend Ollie for providing his favorite recipe!

    Hey guys, Im a brit and I really enjoy watching americans sampling british food. The few ive seen where they attempt to make a british food in the kitchen nearly always have errors, even simple foods like marmite on toast or beans on toast.
    But you guys knocked this out of the park. That looked super aithentic! Im seriously impressed

    A good way to have swede (rutabagas) is to dice it along with the same amount of carrots, boil until they are softened, add a knob of butter and a little salt and pepper. Mash it all together and serve........Goes well with most meats.

    Now that is a proper Cornish pasty, because their pasties only have potato, onion, swede and beef in. Other areas of the UK usually add peas, carrots and the meat is minced not in chunks. You did a fantastic job.

      @@BigJonTV They call swede/rutabaga "turnips" or "neeps" in Scotland, which confused the hell out of me when I cooked a haggis supper for some Scottish friends of mine. Haggis is traditionally served with "neeps and tatties" (turnips and potatoes), and I used ordinary white turnips, not swede. They really didn't work too well, and it took forever to mash the little critters, too.

    Also, you probably don't know but I remember back in the 70s when pumpkins were not that commonly found in the UK, that we used to make what I think you call Jack o lanterns at Halloween, from large swedes rather than pumpkins. I remember the first time we ever got a pumpkin, my older brother travelled to a farm, a couple of bus rides away to get one. It was so large that the bus driver on the way home actually stopped outside our house and helped him off the bus with it. We pushed that thing around in my old push chair (stroller) from house to house, in kind of trick or treating fashion, before trick or treat was really even heard of over here. It was more like carol singing but with Halloween songs. Pumpkins can be bought in any supermarket around Halloween these days, for as little as £1.

      Turnip lanterns were the original Halloween lanterns in Ireland where Samhain (Halloween) originated.

    Yes, we buy Cornish pasties like the sausage rolls... we're so bloody lazy in the UK!! Or maybe it's because we are saving energy and time to get stuck into a two hour process of cooking a full Sunday roast... not many people buy those in supermarkets... but.. *sigh* so many local pubs and restaurants do fabulous Sunday roasts... we just eat out on Sundays a lot... saves on all that washing up after! 😅 Nope... we're just lazy!😖
    Oh wow... you're first attempt at Cornish Pasties looks wonderful! I really appreciate the way you take the time to get all your facts correct about British food... not everyone is so thorough. It makes a change not to have to say in the comments... "it's not quite like that."

    Glad you enjoyed, the secret is the meat & veg cook together in the case. I was raised, man & boy for 40 years on Plymouth & Cornwall pasties. The bakery shops cannot hide as the aroma wafts down the street. As a boy, my best mate's mum used to make huge ones, wall to wall of the oven, slice em up & feed us kids anytime of day while sticking band-aids to our knees & elbows. As they say in Cornwall "proper job me anzum".

    Wow. Jess, you did a marvelous job. I was one of those who asked you to make a pasty. You must have done them proud when Big Jon mentioned the pepper. Your family is so lucky to have real wholesome home cooked food. Nowadays people eat fast or convenient foods.

    My mum told us that in the war (WW2) it was hard to get fresh beef to eat so they would make pasties with corned beef, onion and mashed potato, sometimes other veg was also added if available, it wasn't a true pasty but it was better than going hungry, I've tried it and it's not at all bad.

    Jess, your video made my day! I am a Michigan girl married to a Yooper from Ontonagon, which is at the base of the Keweenaw Peninsula in the UP. It's mining and logging country up there with a heavy influence of Norwegian, Finnish, English, and Swedish folks. We love pasties, though I held a firm dislike of them when I was a kid. 😂🙃 My filling is very similar to yours although sometimes I swap out the cubed beef for ground pork and I don't add bouillon. We love rutabaga! And I use a hot water crust. I typically portion the dough out first and then roll it. We stash these, unbaked, in the freezer and enjoy them whenever the mood strikes. And always and exclusively with ketchup -- when it comes to pasties, we are not gravy people. 😀😁 I prefer to make my own and when my husband and I were first dating, I made them for a picnic. As he was eating one, he told me they were just like the ones that his grandma.....bought from the freezer aisle. He has never lived that 'compliment' down, and he does insist it was a compliment: he meant that they looked professionally made. 😉🙃

    Nice job, they looked pretty authentic!
    Swede/rutabaga is nice as an alternative to mashed potatoes. Give it plenty of butter, salt & pepper, and maybe mix some mashed carrot into it too. Yum!

    Being from cornwall the proper filling is chuck or skirt steak, potato,onion and turnip/swede. Make sure you season twice!

    Looks great, some of us in Cornwall would put some parsley (personal choice in) and a knob of butter plus a sprinkle of flour to thicken the juice.

    They look superb and very tasty, another great recipe for Swede is Lobscouse which is very popular in Liverpool (where they got their nickname) and North Wales, it's a meat and vegetable stew which has big chunks of swede in it, it's one of those staple dishes I've eaten my whole life and still make at least once a fortnight in the winter, it originates from Norway, and a few years ago I had Goulash cooked by a Hungarian cook and it reminded me a lot of Lobscouse, just with Paprika added, I guess meat and vegetable stew is a universal dish after all!

    Wow Jess, I love it when you cook traditional UK food to try. This was fantastic as always. Did you know they used the folded bit of pastry as the handle and didn't eat that bit as it would be covered in coal dust from their hands? Also, one end of the pasty sometimes had a sweet filling, as their dessert, all in one package.

      They were Tin miners in Cornwall not coal miners, but their hands would have arsenic on them so not eating the crust was a good idea.

    In the north of England we use swede love mashed potatoes we peel chop boil and mash with just butter salt and pepper and serve it on a Sunday roast delicious

    The original pastie was in two parts, one part having the meat in it and the other having a jam or preserved fruit in it, so you'd have your main course and desert in the one package.

    This is an amazing channel that deserves hundreds of thousands of subs! Such a wholesome perspective that truly is so family friendly and inclusive of everyone in your household. Love the channel SO MUCH!! Thank-you for the great content and the unique approach to your channel. It's the best! Have you ever considered renaming your channel to a more inclusive name? I think there are a lot of folks who would embrace a name that would reflect what your channel is all about. It's not just about Big Jon (although he is terrific), but it is about the rest of the family, as well. Date night was great, but still kinda missed the kids. Maybe y'all could have a contest to rename the channel; there would be a ton of great ideas from your subscribers. Just an idea; your viewership should be so much higher and making you so much more $, as the content is so much superior to other channels. Thank-you for all you share. You are all loved!

      Thank you so very much!! Honestly, yes, we have been discussing changing our name! All the reasons that you mention are 100% accurate! What our channel is about now isnt what I had envisioned when I first started. But I love our style! I think it will end up being something like BigJon's House.     The pasties looked delicious, we have another pasty recipe that is made by boiling potatoes onions and carrot, then mash them with corned beef, then fill pastry and bake in the oven, I do mine on a plate, and slice into pieces mmm 😘

    I don't know about other people but personally I buy them as a quick lunch sometimes. And there are pasty shops in the UK who mostly do pasties :) I have a pasty shop in my town :)

    wow great job!!!!! they looked way better than the ones I try to make! I need to step up and make my own pastry. So impressed!!! The miners used the crust to hold it with so their dirty hands didn't get on the bit they were eating, but that's my fav part. Thank you so much for making this video!

    I haven’t read all the comments so forgive me if someone already suggested this but with your left over swede, you could do a carrot and swede mash, either on its own with butter and milk or incorporate in with mashed potatoes, it tastes amazing. Btw, those pasties look incredible and I’ve never made one, just buy them but after watching this, I might have a go.😀

    I've never made pastry dough from scratch. I usually buy store bought, wonder if that would work. I love English foods so this would be fun to try. Also, I love Maddie's hair in this video, very cute style.

    Cornish pasties were for fishermen & miners who could not easily wash their hands the former from fish intestines the latter from mining dust which contsined heavey metals & Arsenic, Held by the crust that was discarded, food for gulls & fish or Rats down the mine that would cull the rodents

    When I was young, most families ate home made pasties made to the size of your dinner plate, but these days people buy small versions from bakeries.
    The idea was you used the plate you will eat from to cut the circle of pastry for your pasty, that way it always fit.
    Tip: the filling settles better without lots of big air pockets if you chip the veg into thinner slices. eg. those cubes should be cut in half for the right consistency.
    English pastys often have peas or carrots in and a wiggly join on the top, because the English couldn't master the fine Cornish crimp (it is a knack to the crimp).
    Generally the Cornish pasty is made with shortcrust pastry, but many prefer flaky so they are equally common.
    Beef Steak should always be used. Either skirt steak (marbled) or chuck steak (lean) is what we use here. Other fillings are no longer a Cornish pasty, so there is not much discussion around favourite recipe. Only salt and pepper for seasoning, and the balance of the ingredients adjusted for preference.
    If the beef does it's job it should make it's own gravy which filters through the veg. You shouldn't need extra flavours in there like oxo or added beef stock.
    I would suggest your tip for oxo came from someone that uses lean meat or not much of it.
    Can you please correct the text ? The Cornish Pasty is from "Cornwall" which is next to England ,not in it.

    When you cross the big pond and arrive on the shores of England 1st stop Greggs the bakers ,pasties with meat and potato,swede and carrot/slices with steak in gravy/chicken-mushroom in a creamy sauce and the most sold sausage rolls in the country,the place is a bit of a cult with a store in just about every town.then there’s the Cornish pastie shops with just about anything you can think of in pastry.

    I’m glad that you have gotten around to making your own pasties, next time you could possibly make them with a fruit filling at one end of the pastie, or if you are still nervous about them being savoury and sweet why not just make a sweet version, a favourite of my mothers was to add a bit of sugar to the pastry mix , then split the dough roughly in two, roll them out to about the same size then spread one liberally with jam, sandwich the second piece of dough on top and use a fork to lightly crimp the edges, then slide the whole thing onto a baking sheet and into the oven. When cooked and cooled she would cut it into servings which could be eaten hot or cold as you feel. Sometimes my father would take a couple of pieces with him to work with his sandwiches but he had to hide them from his workmates as they were not above stealing them.

    Iv had pasties every week since I was a kid. Tomato ketchup is a must.
    Also, swedes are hugely popular in the UK. We even mash them together with potato, it’s called potch here in Wales. We have that with a gravy dinner. So a roast meat, green veggies, potch, gravy. Yorkshire pudding. Mmmmmm!!!!

    Where I live in The Upper Peninsula of Michigan there are a lot of Finnish Folks here and Pasties are a hugh food staple here! We fill them with ground beef , carrots ,potatoes and rudabaga

    Good to see there was no carrots, I hate when you go to a pie shop and they've put carrots in a pasty, Would be cool to see you make Bacon and egg pies or Lancashire hot pot if you haven't done so already

    I was so ready to mock and moan about these because to me they are 'holy ground' food......but you did a sterling job on those, I was impressed. They are sadly a dying breed in England as they aren't cool but they are super tasty and if you want osmething to try fo rnext time try Steak pudding with suet pastry (trust me it's worth the hassle!)

    i love cornish pasties. my go to if i can’t get my absolute favourites Forfar bridies and onion bridies which are quite similar to a cornish.
    would love to see you make scotch pies. even a bean and tattie pie. 😁

    Jess you are amazing, Cornish Pasties from scratch. I think you would give Paul Hollywood a run for his money in the kneeding stakes. They looked delicious...and now you've cooked Swede (AKA Neeps) you are all set for Burns Night.

    You ought to do a steak and kidney pudding, lambs kidney gives the better ‘sweeter’ taste ox kidney is cheaper but has a stronger flavour and go for the cheaper cuts of beef such as stewing steak

    They turned out great so that’s a traditional Cornish pasty but we do many different fillings. The newest one I tried was chicken, Cinzano, and mature cheddar cheese
