Not only did she sometimes use heavy cream with her pesto, she also mixed in ricotta cheese if cream wasn't available. It created a milder tasting pesto and made the pasta creamy. She used on chicken and fish too. She came to America in early 1900's.

She has two assistants and she is concerned about cleaning her board. Those scissors were probably not clean and I wonder if she disinfected them after using them. But acrylic cutting board for poultry that you can clean with bleach and then put in dishwasher.

If you didn't disinfect your cutting board you could have cut that chicken up on it instead of using scissors SO much easier. Even if you did clean it, easier to use it then scissors.
I am not a fan of cream or milk, but I bet this would be delicious with marinara and pesto instead of the cream -- or even a mixture of pesto and olive oil and maybe some butter.
Love the dish but i would have added a tablespoon of knoor chicken bullion instead of the salt for added flavor paula love your vids i am so glad you are doing your own thing without the food network..plus thus way youre getting all the money they dont get any...you deserve all the credit and the money!!!!!

I am a long time fan and subscriber here and watch every video so please don't jump on me y'all. Why on earth do you need to spray chicken with those chemicals to put them into a non-stick skillet with olive oil in it? That makes no sense to me when there are so many dangers with those sprays and there was no chance of that chicken sticking. The recipe looks tasty and I thank you for doing a video but the constant needless use of those sprays on here concerns me. Respectfully, 💜
I think it was more for the salt and pepper to stick to the chicken better before she places it in the pan. To ensure it seasons the chicken to it's max potential. If you have the time to rub it in and let it sit for a little while before cooking, that would be better ofc but our dear Paula is on camera and she is cutting a few shortcuts due to this I think.. I've been saying that too. I cringe every time she sprays the food.. Not only is that spray not meant for spraying food, it should never be used in nonstick cookware. It creates a film over time on the finish of the nonstick, which doesn't wash off, and eventually defeats the purpose of nonstick.

I've seen other Southern RUclips cooks spray the food and dishes liberally with it, and it makes me cringe. All she needed to have done was to turn the meat in the olive oil whilst in the pan, and season it in there. It's not even available in the UK, maybe down to stricter controls.

Aside from many restaurants using frozen chicken products, any fresh chicken is never washed due to the prospect of cross contamination with splashing, the sink itself and any pot ware, colanders, utensils, etc. used. What in the heck people. They market kitchen scissors for just this purpose. Many even come apart to put in dishwasher or to clean easily..they are for the KITCHEN. Americans Test Kitchen uses kitchen scissors to debone or cut up chicken often or to cut up whole tomatoes in the can..great idea..

Also not a good idea to use metal tongs on a nonstick coated pan. I guess all that continuous scraping didn’t clue her in as she was going 🤷🏻♂️
I do think she used two different tong utensils, further along they are rubber/plastic coated but that scraping pair looked like metal
