Baked Rice and Chicken

INGREDIENTS:
Chicken:
5 bone in, thighs
1 tbsp Olive oil (optional)
2 tbsps Green seasoning • JAMAICAN GREEN SEASONI...
1 1/2 tbsp Jamaica Valley Chicken Spice
2 tsps paprika
2 tsps onion powder
1 tsp garlic powder
salt and pepper as desired
3 tbsps canola oil
Polynesian sauce and Honey BBq sauce
Rice:
1 tbsp unsalted butter
3 cloves garlic, sliced/diced
1 small onion, diced
Small red bell pepper, diced
1 cup Coconut milk
2 cups Chicken Broth or water
1 chicken boullion cube
Chicken seasoning and salt to taste
1 1/2 - 2 tsps ground turmeric
2 stalks scallion, diced
1 tbsp Green seasoning
Fresh thyme, minced
2 cups Basmati rice
NOTES:
The amount of liquid used depends on the type of rice used. Brown rice would need more liquid for sure! The ratio for Basmati rice is 1 cup rice to about 1 1/2 cup liquid

Hi Jerene! When you said the chicken juices cook down into the rice. 😩😩😩 I know that thing was smelling and tasting amazing!!!
I've never cooked rice with chicken because I'm afraid I'll have the wrong amount of liquid for the rice. I never measure, I just go by the inch rule. Do you go by eye, or do you measure when making it this way? Any tricks/tips? 😁 Thanks for the video.

I do measure for some rice recipes. However, placing the chicken on top doesn't affect your liquid so not to worry. Just use the same amount of liquid you would use.
