  • Ingredients:
    1 liter (4 cups) whole milk
    Instructions:
    In a large heavy-bottomed pan, bring the milk to a boil over medium-high heat.
    Once boiling, reduce the heat to low and simmer, stirring occasionally to prevent scorching, until the milk has reduced to about half of its original volume and has thickened considerably. This may take about 1-2 hours.
    As the milk thickens, it will start to leave the sides of the pan. Continue stirring and scraping the bottom of the pan to prevent sticking.
    When the khoya reaches the desired consistency, which is thick, smooth, and slightly crumbly, remove it from the heat and let it cool completely.
    Once cooled, store the khoya in an airtight container in the refrigerator for up to 2 weeks.

    Stir the milk frequently to prevent scorching and to ensure even cooking.
