Sesame oil chicken (ingredient list provided)

  • Sesame Oil Chicken. One thing to take note whenever cooking sesame chicken is that some time the dish may end up abit bitter, this is due to the sesame oil being over-cooked on its own, so it's always recommended to mix the sesame oil with other vegetable oil when cooking, or only add in the sesame oil towards the end of the cooking process, more like using it as a flavouring oil.
    Ingredients:
    400g of chicken wings and drumsticks (cut into chunks, marinated with oyster sauce, light soya sauce and shao hsing wine)
    Some julienned old gingers
    2 stalks of fresh spring onion, white portion
    1 small bowl of chicken stock
    Enough amount of sesame oil
    Enough amount of cooking oil
    Seasoning:
    1 tablespoon of oyster sauce
    1 round of light soy sauce
    1 round of dark soy sauce
    1 round of shao hsing cooking wine
    Pinch of sugar
    Pinch of salt
    Garnishing:
    Some fresh spring onion, green portion (cut into 2 inches length)

    Ah Pa, pls recommend suitable substitutes for Shaoxing wine.
    I've tried this recipe yesterday but it turned out a little bit salty. I'll improve next week time around.

      Just omit the shaoxing wine if u dun take alcohol

    I reallly reallly like your cooking video it so delicious but because mostly you 'agak agak', it is abit hard for first timer in the kitchen like me but as i do the dishes so many times, i also become pro at 'agak agak' and looking forward for your recipes!
