    Fascinating techniques!... I especially thank you for showing a bit about the "maintenance" of making molded chocolate bonbons, particularly the use of wide plastic wrap sheets to cover your marble slab for easy clean-up. Lord knows, working chocolate gets MESSY!! ;) Thanks again for sharing your skills and techniques. Beautiful, edible artwork.

    Hi, I did make it but I faced 2 issues, first the chocolate bonbon come out of the mold very hardly, the second issue is after I grab one to taste it the cocoa butter coating stocked to my fingers, it looks like paint. Thank you for sharing these videos with us.

    These look fabulous! 😊 if you dont mind me asking, would you share with me what type of tape you're using on the mold to create lines? I want to try this technique but I dont want to use a tape that will damage my molds or leave and residue behind.

      You should try different types of tapes in the outside surface of the molde to make sure you don`t damage it

      1/4" Wide High Temp Masking Tape for Powder Coating, Custom Painting, Hydrodip, Sublimation - Green Polyester Silicone Adhesive
      Try to find this tape it’s the best one you can use

    u wait the first colar to dry then u use another colar ??

      If you using 2 different colors you have to use them in same time before the the first one get dry to make them dry both in same time 🙏😊

    Non professional at all
    The chocolate is over crystallization or not fluidity enough
    This big airbruch is to strong
    You lose a lot of cocoa butter and
    Miss edges in the mold
    You want to make the needle 0.8
    And to set the power to 2 bar
    Then gradually rise

      Those are just air bubbles in the chocolate from the overlap swipe during tempering not crystals. That wasn't gritty what so ever probably first tempering stage.
      He's not really losing much. Big places buy bulk a few bucks per lb. It's losing about as much that would be wasted in clean up. Totally he's maybe lost 3 cents worth that would have been washed out of the gun. Relax its his money not yours. You'll survive *pats head*
