Pot Roast with Green Beans and Tomatoes with Chocolate Cake

  • Pot Roast as a comfort food? Yes, yes, it is. There are so many ways to make a delicious and comforting pot roast. This is how I do mine. Simple, easy, no fuss. You can make it in the instapot on slow cooker mode, crockpot, stove-top or in oven. However you make it, I'm sure it will be delicious. Add a few veggies like potatoes and carrots, or you can add turnips and parsnips or all of them, it's your choice. My preference is chuck roast but use whatever cut you prefer. Recipe below.

    Pot Roast
    2 lb Chuck Roast
    salt & pepper to taste
    1/2 cup flour
    1 Tbsp butter
    2 Tbsp oil
    1/4 cup chopped onions
    1/4 cup chopped celery
    2 tsp minced garlic
    3 Tbsp brown gravy mix
    1 Tbsp beef bullion
    dash balsamic vinegar
    carrots & potatoes & onion cut into large chunks
    32 oz carton beef broth
    Heat oil and butter in instapot on saute mode or in frying pan if cooking stove top or oven. Salt & pepper roast. Coat with flour. Add to hot oil and brown on all sides. Remove from pot. Add chopped onion, celery, minced garlic, and balsamic vinegar. Stir in brown gravy mix and bullion. Add meat back to the pot. Cover with beef broth. Cover and slow cook 6-8 hours until meat is falling apart tender. Add carrots, potatoes, and onion. Cook until tender, in instapot use saute mode for this step.
    Green Beans
    2 lbs green beans, fresh, frozen, or canned
    1 can diced tomatoes
    2 slices bacon
    1/4 cup sliced onion
    salt and pepper to taste
    Saute bacon until just beginning to brown and fat has rendered. Add onion and beans, stirring to coat beans. Pour in the tomatoes, stir well. Salt and pepper to taste. Cook on medium low 2-3 hours until done and there is no liquid left in the pot.
    Cake:
    1 cup self rising flour
    1 cup sugar
    1/2 cup unsweetened cocoa powder
    1/4 tsp salt
    3/4 cup milk
    1/4 oil
    1 tsp vanilla
    1 egg
    1 package instant chocolate pudding
    1 8oz carton whipped topping
    1 tub chocolate fudge frosting
    Preheat oven to 350 degrees. Grease and flour, or use baking spray, an 8X8 baking pan.
    In a large mixing bowl, combine flour, sugar, cocoa powder, and salt. Add milk, oil, and vanilla. Beat with electric mixer on low speed until combined. Beat on medium speed for 2 minutes. Add egg and beat 2 minutes or until well mixed. Pour into prepared pan.
    Bake 30-35 minutes or until a toothpick comes out clean. Cool completely.
    While cake is cooling, mix pudding according to package directions. Let sit in refrigerator until thickened and cake is cool.
    When cooled, spread pudding over cake, spread whipped topping on top of pudding. Soften frosting in microwave for 35 minutes. Drizzle over top of whipped topping. Refrigerate until set.

    I still cook my roast on top of my stove like my momma and my granny. I flour and brown mine just like you do then I take it out of my pot, put onions cut in have on the bottom, put my meat back in add 2-3 cups of water then I add my carrots then potatoes. I never use carrots that are already cut up or lil baby carrots. I buy two pounds , peel them and put them in my pot. I salt every layer. I don’t use beef broth because I want every bite to remind me of my momma and my granny. These beans sounds amazing. I will definitely try them. It’s 11:00 am now… lunch time. I think I want my dessert first after seeing your dessert. You are such a blessing to your viewers. I’d love to live close to you where we could actually visit.       I either you lived closer also. My mama made her pot roast like you but she cooked it in an electric skillet always. I cut my potatoes in chunks and I remember her cutting hers in spears. What memories certain foods bring back. 😋

      @@KarenJonesFoodFamily This is why I watch your videos. We are down to earth nothing fancy home cooks. I got my air fryer like yours and I’m loving it. I love my brussel sprouts roasted in there and bacon 😋. Last night I fixed my brussel sprouts with olive oil, salt, pepper, parmesan cheese. I finished it off with maple balsamic vinegar from Stuarto’s in Lexington Ky. and dried cranberries and walnuts. Then I actually fixed lil thin ribeye steaks in it for ribeye sandwiches. It’s a handy lil gadget. ♥️

    I flour and brown my roast then put it in the pot with a little liquid and cook it til its almost done. Then I take it out, put potatoes, carrots, and onions in the juice then put the roast back on top of the veggies. Then I cut up some cabbage and put it on top of the roast with some salt and pepper, put the lid back on and let it finish cooking. The meat just falls apart, and the flavor of the cabbage goes all into it as it steams....serve it over rice, mmmmm, so good!!!! 😋 💜

    This is definetly a perfectly delicious dinner. And the cleaning of top of cans is something i do also. The crockpot or Insta Pot better way also cheaper on the bill.

    What an appetizing meal...yummm!!! I will have to try tomatoes in my green beans...never would of thought of that one 🙂 ....Karen try this dessert ...bake a layer of chocolate cake ...while warm out of the oven poke holes in the cake and pour 1 can condense milk and one jar of caramel topping on top of the warm cake...refrigerate over night...the next day take it out the frig and add cool whip to the top and crumbled heath candy bar over the cool whip...it is called Holy Cow Cake...you wont be sorry.....delicious! you make some of the best dishes... thanks for sharing with us! 🙂

    Oh my goodness, does your pot roast loook good!! It reminds me of my childhood! My grandmother used to make pot roasts a lot for Sunday dinner! She would cook it with the same veggies as you use, but add shallots instead of chopped onions. Looking forward to trying your pot roast recipe and especially your green bean recipe!
    Karen, do you happen to have a recipe for old fashioned stewed tomatoes? My grandmother would make it, but add bread and bacon, and I believe a touch of sugar. Soooo good! The unfortunate thing is all of these good old fashioned Southern recipes are going away! I so wish I would’ve asked her for certain recipes! I think your Texas chocolate sheet cake would be a great way to end your meal!

      My hubby likes me to cook tomatoes and add bread. Let it stew for a couple of minutes. We don't like the onions in it although we do like onions.

    Karen mom did her in her pressure cooker the kind back in the day with it's little noises but it just fell apart the meat and she use the meat that had the round little bone in it about the size of 50 cent piece this was in Indiana .I cook mine in the oven with my cast iron pot it takes a while and I use the same cut of meat as yours .And I remember some people use that Lipton soup mix but I never had .I bet today my mom would try the instant pot I would love to have one .And the chocolate cake looks so good a nice summer desert too .Have a good day my friend ❤️ Your cooking makes my day .

    So yummy and comforting....I just had to pop back in. I actually made the 15 bean soup you made the other day. It's been sunny here today but still cold....it barely got up in the 40's.....this soup was a hit.....it was so good. I fried some cornbread to go with it and we gobbled it up....lol.     I love okra & tomatoes however never put tomatoes in with green beans. I would try it if someone else made it the way you did, Karen. My grandmother made the best pot roast on top of the stove with a rich dark gravy to have over rice. In the past I have cooked a roast on top of the stove & it turned out great. Not as good as hers however close enough!!! Now when I make a pot roast I'll flour and fry in a pan. Then place it in my slow cooker along with the gravy from the drippings. Well I've got to make one now because my husband seen the video & it put him to craving one!! He get one probably next weekend. Thanks for the video. Everything looked soooo good!!! Take care.

    Karen, this meal looks delicious! I’ve never made green beans with tomatoes, but I’m sure going to try them soon! Could you please tell me about the pot that you used to make them? I’ve never seen one, with the flat lid that locks.
