    I like the idea of using dashi for a potato sauce. that is an interesting twist that I think most Americans would not think of.

      Watching this from Bavaria/Germany 🇩🇪 and comparing it to our local ‚Schweinebraten‘ pork roast with potato dumplings… something similar, and yet quite different cooked. I‘d love to fly taste this japanese dish.

    I will definitely try adding dashi the next time that i make mashed potatoes. Whenever I make steamed rice I always add Hon Dashi granulates to give it umame. I appreciate you so very much for teaching me! The kakuni looks very beautiful and delicious too! Arigato! :D

    Hi. When you cook first time round with just the water, sake, spring onion and ginger is it 2 hours without lid and then another 2 hours with lid?

      Sure:) There are nutrients just below the skin of the ginger! And I don’t need the beautiful yellow color of the ginger. If I need this nice color, I peel off the skin. Thank you for watching and asking😁

    Well I never had potato mash with dashi. I would add 50% to 100% more potatoes or use less dashi because it looked too thin for me.
