I have a question. I've searched everywhere I can think of and can find nothing. Usually I make vinegar in gallon or smaller batches. I normally stir them every day with a wooden spoon. But once a year I've started making a couple of big batches for using in laundry and cleaning, etc. Right now I have 2, 5 gallon buckets of watermelon rinds working away. Both have a thin layer of kahm yeast, nothing unusual for such sweet ingredients. Since they are so deep my spoon won't reach the bottom so I'm just reaching in with my hand and giving them a stir. Here's what has me puzzled. One of them, the first 1/2" to an inch feels warmer. Maybe 5 or 10 degrees warmer. But not both buckets. Just one of them. What on the world? Is it the yeast? Why one bucket but not the other?
My sauerkraut had some of this on the surface. I just skimmed it off, burped my cabbage , weighed it down and its been fermenting 24 days. Still doesnt tasye quiet like what i want. Gona taste again in abouy a week. My first ever batch..wish me luck. :-)
I'm trying to do a peppermash ferment. someone told me to just put a cheesecloth over the top but now that there's a lot of oxygen I'm getting white fuzzy mold. should I have put an airlock on it instead?
I would not use cheese cloth because oxygen will get in. Just have the brine ( non chlorine water and salt) and fill up the jar if the brine in jar comes down. That way, vegetables are always submerged under the brine and will not catch oxygen to get molded.
@@worthdoss8043 Some of my mold on the kraut was white with some green on it I skimmed it off every other day and the kraut was always under the liquid and i did add in more brine at times the kraut is going on 30 days since I made it into my 5 gallon bucket is it still good even after I been removing ths green and white color mold etc, Thanks for sharing great video very informative etc.
@@MyREDTAIL if it smells okay it should be fine, you will know if it isn't and you wont want to have anything to do with it.' Trust me I know and have tossed a few. Just the other day I tossed 3 pounds of habanero peppers, it happens. :>(
There's no harm in eating it, but most people don't intentionally do that. Kahm yeast is really easy to remove and it's unsightly, so we recommend scooping it off.
@@Masontops Mine had green mold. I spooned it out along with the top inch or so or saurkraut and refilled with brine. Will the kraut be edible or must I throw it all out? Thank you.
@@Kube_Dog I had the same thing green and white mold I removed it every day and added more brine its 30 days now & I think its ready to remove from my 5 Gal Bucket etc.Still waiting for an answer on my question also.
That is because no solution is needed. Kham yeast is not harmful. He says he skims it off the surface as do I. Or if it is minor, I just leave it there.

@@jeffmeyers3837 People have different opinions about mold. I tolerate some mold if it is white, but many people would not agree with that. I believe that each person should proceed according to their beliefs. To be sure, some molds are deadly and other molds are used intentionally in food such as in blue cheese, koji production, and so forth. It is good to educate oneself about molds. Sandor Katz does talk more about molds in a different video. And you are right in identifying the title of this video. I think I understand your frustration. The video didn't deliver what it promised.

It's like a video called "how to make wine" that talks about wine, but does not actually show anything about making wine. Aside from clickbait and long-winded monologues, that is one fo the top things youtube viewers hate.

Is it safe to take out mold from the top and eat the saurkraut that has been submerged underneath?
Yes you can.
