Spaniard here: Olive trees are not supposed to be inside or stay potted, they need space outside to fully grow and stand the test of time. These trees can live for even 500 years and are very delicate; need a lot of sunlight and not too much humidity... I'm not sure a NYC appartment is suited for it 🥲. They're also very, very precious.
It’s funny seeing you two eating grapes and cheese together after visiting Spain! In Spanish we have a phrase regarding this: “Las uvas con queso, saben a beso” (grapes with cheese taste like a kiss) and I love seeing you two really feeling it!

I’ve had grapes with cheese many years ago when I visited San Francisco. It was before charcuterie boards were a thing. Also had melon with the grapes and cheese, as well as lox. It was delightful. 😊

Actually those "fermented" cheeses are safe for lactose-intolerant people, the more aged the cheese, the less lactose it has
