You still need to do the initial setup of the controller on a PS5 so make sure you find someone (a friend, cousin) who has a PS5 and let you do the setup. Once done, you can connect it to your PC and Epic Games Launcher
Does it work without the original usb type c charger for the controller? I am trying to do with a play station type C charger, it lights up orange for one second and goes away, fortnite is updating so I can't try, is there any other games this will work for?
Yes, another type c cable works fine. The controller will light up and stay on once logged in to Fortnite because it uses the game input from them. Use the Epic Games launcher and you shouldn't have any issues. As for other games, best that you test depending on what other games you like :)

Yesterday I was trying to play Fortnite on my brothers laptop and I couldn't connect my controller to Bluetooth. The controller was connecting for half a second and then unconnecting, doing this thing for 3 or 4 times in a row very fast. Help pls❤

your paddles will work if you complete the "initial setup" on the console. I did that for mine and they work perfectly 😉
