The heavy cream in Claire's recipe resulted in a less greasy textured cookie in my opinion. But I'm not a milk chocolate fan so I stick to dark and semisweet. I also halved the salt in the recipe and sprinkled coarse salt on the outside prior to baking. Sometimes you gotta borrow a little from one and some from another in order to perfect things according to YOUR own tastes. But definitely Claire for the win! In my opinion... 😉

We are all big fans of a crispier cookie, one that we can dunk or use to make ice cream sandwiches with. I had developed my own recipe but, a few years ago when my husband passed away I lost it after selling my house. This cookie was decadent, with a rich complex flavor. I remember it had a slightly higher ratio of dark brown sugar, plenty of Madagascar bourbon vanilla and baked after 24 hours in fridge. Four large batches wouldn’t last a full day in my house! These cookies were large and thick thick with almost a butterscotch like finish. I’ve tried to make this cookie for my sons and grandchildren and have failed. Primary reasons are they are greasy and they are too hard. Any ideas?

Your cookie sandwiches sound amazing, I have a recipe of buttercream cookie sandwiches on this channel, where I use a lot more butter and a bit more white sugar to help it spread more. I’ve also made thicker cookies (levain style) on here and I have much more flour than the other 2. But as far as getting it both thick and crispy, I would imagine like you did, adding a lot of brown sugar, because too much flour would make it fluffy and too much butter would make it too thin, so keeping those at moderate amounts would be a good start. I hope you can find something similar to re-live those wonderful memories!

Yeah it’s really hard to choose! But let me say that I’ve made both recipes since making this video and both are completely formidable. You really can’t go wrong! I will say that Claire’s are smaller so you can get more (reasonably sized) servings out of it, but honestly the best answer is to eventually try both!
I did cool it for about 15 mins in the fridge, but, as long as it isn’t hot enough to cook the eggs, it doesn’t really matter since the dough will spend 2 days cooling in the fridge regardless
@@matthinkampcooks it won’t make a huge difference but it does make a difference since the sugar will not combine the same . Did Claire’s recipe two days ago with out fully cooling the butter. Then today with her ice bath method and even the dough is so much more flavourful! Awesome video!
For the most part I would agree, but tasty does have a few recipes that I use. I use their regular chocolate chip cookie recipe all the time, as well as their perfect brownie recipe. Perhaps I need to do a Claire v Tasty brownie showdown

Personal and cultural preferences. In Europe this would look like a completely normal kitchen. I would not be able to live in a 'decorated' house like I see in most American videos. It is just what you are used to.

Yeah this is quite an important step for the texture. It allows you to cream it with the sugar, and I think the result is less greasy.
