I used this exact batch of ganache to cover a 3 pounds cake of 7 inches. I had some leftover after covering the cake. So you can easily cover one 4 pounds cake or two cakes of two pounds each.

I need to ask few questions, it is said that dont store your chocolate in fridge if you want to make ganache, how do you store your chocolates in summers. Secondly for how long it should be kept in fridge before whipping? And how to store the leftover frosting? And does it crusts when kept in fridge after applying on cake? Best wishes for you.
Thank you for subscribing. ✨ Never store your chocolate in fridge. I just store mine at room temperature. You can also store yours in air conditioned room. Just never store it in fridge, it absorbs moisture and will not melt nicely. Keep the ganache in fridge for at least an hour or until it sets completely. Store your leftover ganache in an airtight box in freezer. It will be good for a month.

It will crust if you leave it uncovered. Keep it covered when not in use.
