White chocolate ganache main compulsory hai hai. Agar nahin dalain gi to ganache bohat sticky banegi aur sharp edges bohat mushkil say banain gay. Texture bhi smooth nahin ayega itna.
Ji ap use kar lain. Lekin I would suggest dairy cream. Whipy whip main pehlay say sweeteners hotay hain, apki ganache ziada meethi ho jati hai. Dairy cream main koi sweetener nahin hota, it brings out the flavor of your chocolate.

Double boiler pay kabhi bhi bowl pani say touch nahin hona chahye. Low temperature pay melt karain. High temperature pay chocolate jal jati hai aur hard ho jati hai.
