Lechon Belly (Rotisserie Grilled Pork Belly)

- My version of Crispy Lechon Belly. It is a proven recipe and guaranteed crispy skin! Try and enjoy.
Ingredients:
3 kilos Pork belly
Lemon Grass Paste mixture
100g salt
2 teaspons fresh ground black pepper
1 handful fresh green onions
kitchen twine
2.5 kilos Charcoal brickettes
For the Paste:
9 stalks lemon grass
2 large onions
15 cloves garlic
4 kaffir lime leaves
5 bay leaf
2 T soy sauce
2 T vinegar
2 T tamarind paste or 1T powdered tamarind (sinigang mix)

Sir, that paste was the key for making it taste good. I also let it sit overnight in the fridge unwrapped so that the skin could dry out
making it very crispy.
Indeed! I modified the recipe a bit by adding 3 pieces star anise and the smell and taste was even more mouth-watering.

Tips to make the skin very crispy pls?
Hello Sir. Thank you for your very informative presentation. It's a great help to a newbie like me. I just would like to ask what would be the steps(aside from wiping dry) to ensure the crispiness of the belly? I am using an open air rotiserrie grill and it seems the belly skin on my case is still gummy after 4 hours. What might be a solution for this? Thank you.
You need to increase your temperature or adjust the height of the rotisserie closer to the charcoal or your heat source. Drying the skin before makes it crispier. Thanks for watching!

Yes, you can. It works in the oven without rotisserie. Dry the skin to achieve a really crispy skin.

You have to make sure that at the last hour, you have more charcoal to raise the temperature, that will make the skin crispy.

Where can I get Kaffir leaves?
You can find it in your local supermarket. Try SM hypermarket or if you are in Metro Manila, you can find it in Farmers Market Cubao. You can replace it with Sampaloc leaves. (Talbos na dahon). Thanks for watching!

Pay Keso Ramos it's not. It's rock salt. Not as salty as iodized. And this is the way cebuanos do. We put good amount of salt in our lechon. Because it drops down when the fat is rendered. So you should put good amount of it.
