good way to ruin your tea tried the difference you need to use more leaf for the same amount of water compared to brewing at 80 degrees so the result is you are using up more tea and getting less of what the leaves have to offer how do you square that circle?
Not ready to give up scale and timer yet, I'm still new and don't want to mess it up. Tea has become a precious commodity to me. Geez trying not to be a snob lol
Quality Chinese teas require boiling water to bring out the full/best flavor of it, especially the mouthfeel. But feel free to lower the water temperature if the tea is bitter or astringent when brewed with boiling water. Indeed the boiling water makes the tumbler hot and hard to sip from. If I want a ready to drink tea quickly, what I usually do at home is adding boiling water first, then cold water to bring down the temperature. But of course, you can always brew tea at your preferred temperature. :)
Buy and use Double Insulated GLASS Tea Cups, so you can hold it without getting your fingers/hand burnt. The transparent Clear Glass Tea Cups allow you to see what Color the Tea is, and that's also part of the Total Experience. Sip the brew, sucking in lots of air too, to cool it down, as you drink. That also helps the inside of your mouth, tongue, nose, and throat, to get all the aromas, flavors, and taste of this Tea. It's a really complex experience, but one that you will enjoy immensely, as it unfolds in your mouth and nose being sent on to your brain for the wonderful goings on!!!
In china i was at a teamaster. And she always put the hot wayer on the leaves for 10 seconds then pour it out. What do you say about this? Do you know? It was in hongzou.
Phil, you guys' channel is the best tea channel I've come across. I've never brewed Long Jing gongfu style before, and I wanted to give it a go, tonight. This video was exactly what I needed. You guys are awesome. 👍👍
@ZhenteaCa HaHA! I just got done with the second infusion, and your instructions were right on the money! Drinking great tea and watching Alien- I'm living the dream! 😆

As long as we are all brewing and enjoying tea ;)
A big lesson for me was that there is not one correct way to brew tea. There is no mess-up, only lessons.
One can not learn without paying tuition.
I was raised around tea drinkers , so all this is very familar ....except for that figurine for you to pour water over hahahah that is so extra
We love the tea baby! 👶
Could you explain more about why you guys use boiling water vs ~80-85C? I find boiling water makes the tumbler too hot to hold. Good video!

How long will Long Jin keep in the cupboard? It's packed in airtight but not vacuumed bags.

A ninety millimeter gaiwan? Is that it's diameter or height? :-)
From sight, your longjing seems to be a bad quality one. Where did you buy it?
