“I’d rather teach a cook chemistry than teach a chemist to cook” is giving major “I’ve watched NileRed’s cooking videos and I’m scared” vibes 😂😂😂
Arielle was an absolutely delightful guest. Every so often we get an episode like this where I just don't want it to end.
I dunno, she started off rather pretentious thinking people don't understand taste. It's common knowledge. I would enjoy never seeing her again. I won't be finishing this episode.
Josh bringing up "chicken in a biscuit" is why I love him lol. A beach trip isn't a beach trip without those and a can of sharp cheddar canned cheese spread.
Dude! So many times have my family gone to dollar tree and gotten snacks for a beach/lake trip. Chicken in a biscuit was always in that bag, bro.
As a sociology of food graduate student - this episode was NEXT LEVEL insight!! Bring on more doctors pretty please! :)
I'm pretty confident Josh asked Arielle to adopt him after this episode. He was so into the science of flavor.
I don't drink the new coke flavors because it doesn't say what its supposed to taste like, like what is Dream coke supposed to taste like.
Exactly
Dream coke tastes like failure.
@@MikeInOregon Every one of their new flavors has been mediocre at best, actively awful at worst.
The last new great coke flavor was Orange Vanilla
I too sneak flasks into lush cosmetics, it is my weekly Wednesday activity. 😂
Ah yes, watching this at 4am like a normal well adjusted, totally not an insomniac, human do.
We come in peace 👽
Does*
Lime Coke from the early 2000s was quite possibly better than normal Coke. Now the only way I can get it is the fancy multi-favor Coke fountain machines in fast food restaurants. I guess it didn’t sell well enough to keep selling it in stores. I think the point of introducing so many flavors is also hoping to find one that sells like gang busters, maybe it will stay around forever, but if not, ride it as long as you can and do it again, or like you said hope someone tries a flavor Coke that is more permanent as a substitution.
A lot of the "New flavor" marketing has to do with shelf space. Stores only have so many square feet for soda, and big companies get priority. More unique SKU's means less space for a smaller company to get on the shelf. Even if it doesn't sell well, it's killing potential competition.
MatPat did a good theory on why everything “tastes like chicken” and I’ve been interested about flavor Science ever since 😌 it’s super interesting how people come up with flavoring for things not using the natural things to make the flavor
Before I even clicked on the video, Josh, & Emily's episode about Banned Space Foods on MK tuesday was the very first thing I thought of, when I saw the picture of Josh, & Nicole with the Space Dunk Oreos. 🤣🤣
Coke a cola … I didn’t even know they have a blue raspberry flavor. But kidsssss love theese flavors! That’s what’s up
“kidsssssss”
❓🤷🏻♂️⁉️
The Sierra Mist to Starry change happened simply because their patent expired during a dispute with a creator with a similar name and they lost the case.
New flavors are introduced because sales are down. More people are becoming health conscious, price gouging is high, people have less expendable income ect and companies are fighting to get us to spend on them again. Regardless of brand name. Like they said, profit margins and marketing.
As someone that loves sweet things, I love where Nicole went with the sweet chip territory! I love banana chips, I love anything crunchy as a texture, so a candy flavor as a chip would be the absolute highlight of my life. If something like this already exists, someone point me to it please! 😂😂😂
Chocolate chippers: Potato chips dipped in chocolate. Its a North Dakota thing, but I believe it was done by lays or someone else and sold nationally for a while.
I'd recommend Nilered's video on making grape soda out of latex gloves if you want an example of using chemistry to extract flavors
Salt and pepper chips are SO good.
As for microphones, they vibrate, which is encoded into an electrical/digital signal that a computer can decode. Look up the first wax recorders. Literally just cutting vibrations into wax, then reading them back to play back the sound. It seems too easy, but that's what recording is, at a fundamental level. Just encoding soundwaves.
The thing with freedom fries was a reaction a lot of US citizens had to the only time Article 5 of NATO was evoked in response the terror attacks and France told us to get bent that's a terrible reason to go in guns blazing (which they ultimately were right for). But yeah it was because France had the gall (or Gaul) to criticize America during a high pitch fever of American patriotism thus "Freedom Fries" instead of "French Fries".
I found Dr. Johnson fascinating!
This episode was fascinating. 🤯
Nicole wants to go full Wonka 🎉
Now I hope Dr Enayati and Nurse Scherer are going to be this year's Halloween outfit!
@5:45 - thanks, I had to stop the video to look up what “Frogtown” was.
For those not in the know, it’s the Elysian Valley in central LA. By the few descriptions I read, I am imagining a Los Angeleno version of Williamsburg in Brooklyn, NY.
This was a great episode ... it reminded be of a book 'The Emperor of Scent: A Story of Perfume, Obsession, and the Last Mystery of the Senses' which I unexpectedly really enjoyed when I read it... although it turns out that was written 20 years ago, so it might be time to revisit through a scientific exploration of flavour in Dr. Johnson's book!
PLEASE do a part 2 with Dr. Johnson. I could listen to her talk food for hours.
doctor johnson is the coolest person on the planet OMG i've never once thought about how flavors happen and i am in AWE
Fascinating guest! Loved this episode
There's a similar book written by the author who wrote on food and cooking. It gives practical advice on how to cook and avoid common cooking mistakes.
I will buy a bag of shredded cabbage over a bag of shredded lettuce any day! Love cabbage. I also love a good bag of spinach too. So good
Guys those sweet chips you're talking about! They exist! ^^ In asia! I live in South Korea and had peach crush flavour, pineapple, mint choco, honey butter...theres so many flavors of sweet chips in Asia!
29:01 ok. You had the perfect person to clear up the Dr. Pepper issue in the studio, and never asked at all. I literally never want to hear that theory of yours again. Dr. Pepper is “Spicy Cherry”, and not literally Coke mixed with root beer. You had her there, and you never even asked.
Awesome job Josh with the podcast see you on Tuesday
Arielle was my favorite guest on this podcast. Please have her back! I’m so interested & I will be buying her book
Man them space dust oreos are addicting. I like em lol
I was literally talking to my dad about the oreo spacedunks two days ago because he bought a pack and I showed him the Brennan Lee Mulligan Oreo CEO video
"Lubrication is a sensory experience." Well.. That is a sentence, yes.
I miss the lays chicken and waffles so much. Herr's (out here in Pennsylvania) still does a similar flavor competition every year highlighting a lot of local (Philly) specialty foods and are pretty decent
I'm so glad they had a food scientist to come on the show! FOOD SCIENCE REPRESENT!!
Dear Buffalo,
Chill.
Love,
Watertown
They did it in the UK too (Called Walker's here instead of lays), the first round they had a chilli chocolate flavoured one that sounds horrible but it was delicious
i have to admit the galaxy oreos are actually my favorite 😔 they’re so good
I always love listening to food scientists because many misunderstand the inherent connection between science and the culinary arts! It’s all science and art babyyy!!
As a human from Buffalo….Josh is right!! I went because were miserable and just want something to argue about 😂😂😂
What a heck of a resume on Dr. Arielle Johnson!
I’m a huge space nerd and food science nerd so this is the perfect episode!
My Walmart had Pancake with Strawberry Syrup flavored potato chips!!! I think they were lays but I can't remember, the one case my store ordered sold out in a few days! I didn't get a chance to try them so I don't have a review for you, but you should try to get some :)
I tried them and the strawberry flavor vastly overpowers the bacon flavor, so they are a but difficult for me to eat. I have been eating a couple chips at a time over several days and have most the bag left. I think this was an IHOP collaboration?
I'ma watch this later but based on the thumbnail...space dunk oreos are actually pretty good. Something is more palatable and easy to eat more of them than regular oreos for me.
In regards to chips with sweet flavors, H‑E‑B made a special edition flavor that was “Vanilla Milkshake” It essentially tasted like the experience you have when you dip French fries in a milkshake. I had quite a few people who looked at me with side eye when I told them they had to try them. And literally not one person disliked them. They were by far the best chips I’ve ever had and unfortunately, they are no longer available. If you ever get a chance to try them, you shouldn’t. Instead you should take them, run away, and send them to me!!! 😂
I agree on the Kale. I hate soggy spinach, not a fan of the flavor much either, but especially the cooked texture. I prefer the texture of kale or chard, and I will substitute it for spinach always.
so when are we gonna get the "hot dog water" mugs?
"Banana Laffy Taffy chip" actually made me gag
Herdez in Mexico made a contest to create your salsa recipe and submit it and the first 3 places got their salsa canned and sold nationally
I feel like many of us learned about the importance of smell in taste during covid lol
45:19 I have an allergy to _something_ that's in certain canned meats, most notably Spam. I have never been able to isolate it or been able to explain why, for example, ham doesn't trip it, and Vienna sausages evoke a milder reaction, but nonetheless, I eat it and my throat gets that tickling and itching sensation, and the first time I ate it, when I was maybe five or six, I threw up. (The first time I can remember throwing up, in fact.)
The only other allergy I have (aside from things that most people are allergic to, like mosquito bites and urushiol oil) is dog and cat saliva, but _only_ the saliva, and only when it's fresh, so to speak. Whatever it is I'm allergic to, it's pretty volatile, because it only hits me when they're licking me on the face or, as I learned when our cat was a kitten, on the nipple, which is much more porous than the rest of your outside skin because of the milk ducts. (And this is true even for cis men.) Our cat grooms us all the time but it was only when he tried to nurse on me as a kitten that I started coughing. (And, yes, he was weaned too early; he was the son of a stray or feral who abandoned him. A friend's kid found him and took him in, but they couldn't keep him, so my spouse and I took him in.)
So cherry flavor made from paint thinner is a natural flavoring?
what a fantastic guest!
That machine she talked about that measures flavor molecules, there’s a dude on tik tok that broke down each Zyn flavor. Cant miss tv.
Starry was certainly a rebranding but they also changed the recipe to Sierra Mist
Lays Do Us a Flavor Gyro Kettle Cooked chips changed my life. I would do anything to get another bag of those!!!!
Maybe that's why I like the Galaxy flavor. I used to love Dimetapp.
Good Eats was SUCH a great show. I know how to cook because of Good Eats
Cuban Sandwich flavored Lays were my favorite potato chip flavor ever.
I'd say the united states specifically is very boring with their flavors.
A lot of flavors are boiled down to more sugar instead of a spice.
Where do you live in the US?
So like.... Nicole, IHOP sweet pancake chips just dropped. Go for it!
I've had the argument on hotdogs being sandwiches or tacos so many times now.
i'm now curious as to what would happen if someone spun light brown sugar fast enough, in something like a cotton candy machine, would it melt or would it end up like a caramel colored cloud of, fluff?
Please bring Dr. Arielle Johnson here again to just talk lol! Or do her Last Meal!!!!!
Northern NY fireman BBQ and Blue cheese was my submission to Lays - they did not pick me:(
Love mythical!
Lays has an IHOP strawberry pancakes chip. It’s fruity and tasty.
I have issue with Josh calling a new Slurpee flavor a loss leader. The margins on cigs are terrible, the highest margins in 7-11 are Fountain drinks, Slurpees, and Coffee, by a lot. That is why the staff get those for free while working.
Herr chips made a creamed corn flavored chip that tasted just like creamed Coen. It was delicious, but the flavor didn't match the texture, and my stomach was confused into nausea
i loooooooooved those oreos
I thought I would like the space dunk flavor, but the pop rocks in it don’t really add flavor
Noooooo on the sweet chipsss lady! Noooooo
I just want to say this about oreo. Why dont they just do the dark cookies with peanut butter filling. Like in parent trap. Also i just hate the creme filling..
more spice versions of everything. i demand it
omg i cant eat corn syrup. i had someone test to see if i was... lying
i got very sick. and he confessed why was in the ER.we had a long talk about respecting allergies. and
i jsut tell people im allergic to bar the explanation and someone thought i was making it up. I later explained to him, hat i should have just said before. i have a failing liver because of my lupus. i have to monitor a lot of my food intakes andi CANT eat corn syrup.. or corn i get so soo sick. theres other stuff on that liet but most of it isn't stuff i come in contact every day as long as i dont eat fast food.
I miss corn tho.
The guy that might have lactose intolerance he could actually just have acid reflux issues. If I have a small amount of dairy I'm fine but usually at restaurants they use so much dairy that it sets off my gerd and causes nausea and a lot of other negative issues.
I'm a security guard at one of the flavor making factories they spoke about lol
Very iconic guest
Lays "Do us a flavor" challenge is where Dill Pickle flavor in chips comes from!
Love you guys! I do disagree about one of the opinions. About the food opinion, the woman whose husband thinks he's lactose intolerant. Y'all aren't considering the fact that she's been planning food and cooking for the family for so many years. Avoiding dairy is a HARD one - any allergy is challenging to deal with long-term, but lactose is a lot more prevalent in everything than beans. She has BEEN being a GREAT spouse for a LONG time. This is, obviously, something that needs to be discussed in the relationship - but, spending a little while beforehand doing research to discover whether or not the sensitivity is psychosomatic is not entirely unreasonable; especially in a long-term relationship, where you likely know exactly how your partner reacts to a food, and I assume she knows she is actually poisoning him, just risking causing some short-term discomfort. Being freed from an allergy is an incredible relief of mental strain; it is worth exploring the possibility, in order to improve the mental health of both partners!
Arielle is literally everything i aim to be
I think the taco pop rocks should follow the spicy and sour/peppers and lime trend instead of being just straight up sweet.
My grandfather always soaked fish in milk.
CHIKIN N A BISCUIT !!! HELL YEAH !!
38:37 Buffalo Wings are a very specific dish, and there are also a lot of other varieties. Just saucing fried wings does not make Buffalo Wings.
40:21 Blue Cheese, all the way.
Year 3000 coke was actually so disgusting it was like garbage, similar to the XP coke situation which actually tasted so evil I was afraid I had consumed poison.
Bleach getting a shoutout from MK XD
I feel the same way about chewing gum. Every company has the same 5 flavours with maybe one odd ball. Where’s the creativity and thinking out side the box?
Good Mythical Weekend
Don't worry, Arielle, I got your joke about the IRB form.🔬
34:00 somebody get this man hooked up with a good plate of dinuguan with rice
Supermega on last meals
Can Arielle come back??
I absolutely love those oreos and will be sad when they go. They are a fun silly indulgent and satisfying snack experience. 🎉
Space Dunk Oreos are actually really good though. The popping candy is fun.
People in Minnesota from a certain ethnic and religious group do not eat for joy. They eat for fuel.
I just lost my last two brain cells when she said this 19:14 fire up what??!??!!! “she explains” Ohhhh I still don’t understand “picture pops up” still don’t get it “explains a little more” I’m in space right now 😂 I’m high btw
