God used Moses and inspired him to write the first 5 books of the Bible with the Law Covenant to Israel and the early history of mankind and what led to the founding of the nation. Those writings were not full of mistakes. They didn't have to keep being updated or changed. The Law remained unchanged for 1500 years until Christ fulfilled it. Again David was inspired to write what he wrote. He was imperfect but what he wrote under inspiration didn't have to be changed and updated every few years or weeks. It was not full of mistaken beliefs that had to be clarified or adjusted even by the Jewish Priests. It was the Jewish Priests that tried to add their traditions to it that made it invalid but the word of God remained unchanged. Same with the Apostle Peter or Paul. The biblical canon was reaffirmed by the regional councils of Hippo (393) and Carthage (397), and then definitively reaffirmed by the ecumenical Council of Florence in 1442.
Finally, the ecumenical Council of Trent solemnly defined this same canon in 1546, after it came under attack by the first Protestant leaders, including Martin Luther.
