Scalloped Cabbage -- Cast Iron Wednesday

- A really yummy and easy cabbage dish perfect for the fall season!
This recipe is passed on from a dear family friend, Ruth Dugan.
SCALLOPED CABBAGE
1 medium head cabbage
2 C milk
tbs butter
2 tbs flour
1/2 tsp salt
1/2 tsp pepper
8 OZ Druck's cheddar cheese or a similar sharp cheese
Cut cabbage into bite sized pieces.
Parboil in lightly salted water 10 minutes.
Drain off water.
Make white sauce by meting butter, adding flour and mixing into a roux, then adding the milk mixing well.
Over medium heat, boil roux 1 minute, careful to stir and not burn.
In a greased casserole or cast iron dish/pan, layer the cabbage, then half the sauce, then half the cheese, and repeat.
Dot with some more butter and spread breadcrumbs lightly over the top as optional.
Bake uncovered 30 minutes at 350F or until golden brown on top.

Hi Helga. We retired in the spring of last year. I remembered reading an article that mentioned you in the Phila. Inquirer and searched for you on RUclips. One of the thing we enjoy doing is cooking together.
We’ve had fun doing making the ham loaf, cabbage steaks, and scalloped cabbage. We had left over corned beef(not enough for a complete meal) to use up. We remembered the scalloped cabbage recipe and decided to chop it up and add it to the layers in the pan. We had it as a main dish with a salad and enjoyed the results.Thanks for all the time and effort you put into your videos. We enjoy watching (and making) the recipes you present. All the best. Lol, you guys eat different for New Year's. We always have a pork roast with kraut and dumplings and mashed taters. We always make pork for new years because PA Dutch lore says it is good luck because pigs root ahead into the new year. Thanks Calvin!

very interesting recipe. its november so i think i'll try this next week. something else about cabbage: my grandma used to cut it up in maybe two inch squares and cook it in half tomato sauce/half water. now that was good! i may even try that with v8 juice instead of the tomato sauce some day.
There's a million ways to make cabbage and I think I love them all! Cabbage soup is similar to that, and then of course, when I make pigeons (halupki) which are the stuffed cabbage rolls, we do it in the sauce and water. And sometimes with kraut.

Making this Sunday to go with meatloaf. Would LOVE your recipe for ham loaf!
Would be great with ham Loaf. Ham Loaf---Loaf part: 1 lb fresh ground pork, 1 lb ham, ground, 1 cup breadcrumbs, 1 egg, 1 teaspoon salt, 1⁄8 teaspoon pepper, 3⁄4 cup milk. Loaf directions--Grind meat (if necessary). Mix ground meats, breadcrumbs, egg, salt, pepper and milk together. Shape into a loaf.Bake at 350 degrees Fahrenheit for one hour. SAUCE: 2/3 C brown sugar, 1 tsp dry mustard, 1/2 c water, 1/4 C vinegar. For the sauce, mix the brown sugar, dry mustard, water and vinegar together. Pour sauce over loaf. Continue to bake for another hour.

Oh yes, the ham loaf.
Ham Loaf--- 1 1⁄2 lbs ground pork
1 1⁄2 lbs ground cooked ham
1⁄2 cup breadcrumbs
1 small yellow onion, chopped (optional)
1⁄2 teaspoon white pepper or 1⁄2 teaspoon ground black pepper
1 cup brown sugar
8 oz maple syrup
1⁄4 cup mustard (I use spicy brown)
DIRECTIONS
Preheat oven to 350 degrees.
Spray a cookie sheet with cooking spray.
In a large bowl mix all of the loaf ingredients well.
Shape into a loaf on cookie sheet.
Bake@ 350 degrees for 1 1/2 hours.

Helga, this looks delicious. Does it handle up well for packing and taking to a church dinner or work potluck? I am always looking for something more interesting than the traditional broccoli casserole. I have seen up to six of those at one time. How would you say this recipe handles?
It handles fine for those, Ruth took it to church suppers and big gatherings all the time! It really is yummy!
