PA DUTCH AMISH EGG NOODLES

  • This simple but delicious egg noodle is the foundation of many a dish and makes a great side dish as well. They are easy to make. They just take a little time to let dry.

    INGREDIENTS
    3 egg yolks
    1 whole egg
    3-5 Tablespoons cold water
    1 teaspoon salt
    2 cups flour
    Stock (vegetable, chicken or beef)
    INSTRUCTIONS
    Whisk together the egg yolks and egg until lightened in color. Whisk in 3 Tablespoons water and salt.
    Add the egg mixture to the flour and work together with a wooden spoon until a shaggy dough begins to form.
    If the mixture is too dry, add an additional Tablespoon or two of water until it comes together.
    Turn the dough out onto a well floured surface and use your hands to knead the dough until smooth, or use a dough hook in your mixer about five to ten minutes.
    Re-flour your surface if needed, then divide the dough into two balls.
    Using a floured rolling pin, roll each dough ball out into a thin circle.
    Allow the dough to dry until no longer sticky but still pliable, about 10 minutes to 1/2 hour.
    From here you can either use a cutter to cut long strips to the desired width, or roll each circle up like a jelly roll (I roll starting on the long end) and cut using a cutter.
    Lay cut strips out on a cooling rack to dry completely.
    Store in an airtight container for up to 1 month.
    When ready to cook, drop into boiling water or broth and cook for 10-12 minutes or until soft but still a tad chewy (NOTE: cooking time will vary based on the width and length of your egg noodles). .

    So it’s 2am. I’m pregnant and nauseous. One of the only things that appeal to me lately is pasta. Just plain pasta. But I always just have the boxes stuff. So I’m watching your video and just dreaming of these noodles! I have two really picky kids so I’m hoping they will give this a go and like it!

    This is the food I grew up on. I’ve moved from PA long ago but recently went to a restaurant that serves authentic noodles like this. I had the noodles with jagerschnitzel and a side of apple sauce. I honestly cried after eating it 😂 just remembering my childhood like that. It hit me like a brick. Now finding this, I’ll be making them way more!

    Thanks for posting this, this is how my Grandma and mom made egg noodles, they weren't Dutch but Gr. Grandpa and Grandma settled in PA sometime in the 1860s, so these kinds of recipes got passed down over the years. These are real egg noodles with the extra yolks that I remember from my childhood! Delicious!

    We have chicken and noodles here served withmashed potatoes, always. I have made many batches of noodles. So did my Mother and my Grandma. I am 84 yeats old. Nice video. Thumbs up. I use my Kitchen Aid attachment to roll and cut mine any more.

    Grandma used to make us homemade chicken soup that was mostly noodles. And I still love it. She did not brush the rolling flour off so soup was thick. Wifes niece favorite meal was noodles and butter, when she was very young. I posted no-knead focaccia bread today. Those noodles sure looked good. I could eat a plate full like that, with just butter and parm. Thank you for the video. Helga

    Grandma taught me that same dough, just a lot thinner to make drop dumplings. ive never thought about doing an actual pasta out of it. Totally going to next week.

    My gram made home made noodles. I would be so fascinated watching her cut the noodles. She would hold 2 knives between her fingers and cut them like you described.

    Yes, your noodles are much wider than we make. They are more in the shape of our dumplings but a different dough of course.

      Dumplings and noodles here are two very different things. Our dumplings are big and fluffy, while the noodles you speak of are pasta/noodles to us. Making noodles just with dinner, I make the wider ones, or for pot pie, square patches, and then thinner for other stuff.     A stroganoff for sure is the destination for these noodles. Maybe sausage, cabbage and carrots would also be good. Nicely Done. Thanks for sharing. 😎.

    Oh man Helga ! Again wanted to jump thru the screen .. I absolutely love PA Dutch egg noodles (who doesn't} rite . Just so simple with butter "N' garlic or whatever . Possibilities are endless . One comes to mind tho , with a nice slow cooked pot roast with the thickened gravy . Oh my on a nice rainy Sunday !! Cheers once again ..... Oh love the Lodge , using mine tonite ....

    I used to make Kluska noodles however that is labor intensive. I tried a bag of Amish Egg Noodles and could not tell the difference. I now use Amish noodles in my soups I make from scratch. I either store the noodles separate from the soup or incorporate the noodles into the soup (depends on batch size)

    Love homemade noodles, my mom use to make them on holidays put them on cut open paper bags and dry them . never had them fried but sure looks good

    Why, why, why, would I put myself through a video like this at 6:25 in the morning? Now the grumbles will be with me until lunch and work is over.....my mother made homemade egg noodles when she made her Hungarian Chicken Paprika.....cheers Fred

      LOL, I'm sorry! Well, sorta. I make authentic chicken paprikosh and I'm making it tonight to go with the rest of these! A very good friend of our family's made it all the time and taught me, she was Czech but her husband was Hungarian and man, could she cook and bake. Her father had a bakery over there and the Nazis took it. She got sprayed with DDT etc and finally made it out of there and to America where she met her husband. She built a 4 story winery and vineyard with her bare hands. I admired her very much.

    These look amazing! Maybe a dumb question but when you say they keep in an airtight container for a month is that refrigerated or just in the cupboard?

      No dumb questions! Except the one you don;t ask, LOL! Dried egg noodles will last for 4-6 weeks at room temperature, but up to 6 months in the freezer, so freezing is the best option if you want to keep your pasta for more than a month.

    One of my Hubby’s favorite things are egg noodles...any way you can serve them....sadly I have never made fresh noodles...but, I am tonight!!....I think I will make Halushki....When I made that dish for the first time ever a month or so back, the Hubs was out of town....I adored it...but, he missed out...been talking about it to him...and about all your recipes that I want to make or have made ( he is now a big fan of yours as well, by proxy 😉) so, why not make Halushki tonight with your fresh made egg noodles?....Thanks ONCE AGAIN for a fantastic inspiration, Helga 😘.....✌️💜💋

      INGREDIENTS - MAKES 1 PIE
      Pie Crust (or use store-bought) for a single-crust pies
      1 1/2 cups flour
      1 teaspoons salt
      1/2 cup of butter or shortening OR half of each
      1/4 cup ice-cold water
      Chocolate layer
      1/4 cup cocoa
      1/2 cup sugar
      1/2 cup boiling water
      1 teaspoon vanilla
      Cake layer
      1 cup sifted all-purpose flour
      1/4 teaspoon salt
      1 teaspoons baking powder
      1 egg
      1 Tablespoon shortening OR butter, melted
      3/4 cups granulated sugar
      1/2 cup whole milk
      1 teaspoon vanilla
      DIRECTIONS
      Pie Crust
      In a bowl, blend flour, salt and shortening together with fingers until mealy, about the size of peas. Add enough ice water to form dough. Mix just enough to moisten. Over-mixing will result in a tough dough. Press into disks, cover with plastic and keep chilled in the fridge till you’re ready. Chill at least 1 hour. When ready, roll out on lightly floured surface and fit into pie pans. Flute edges as desired.
      Cake layer
      Combine flour, salt, baking powder in a bowl and set aside. In another bowl, combine eggs, shortening or butter, sugar, milk and vanilla; mix well. Slowly add in the dry ingredients until well incorporated. Pour cake batter into pie crust.
      Chocolate layer
      In another bowl, combine ingredients for chocolate layer. Gently pour chocolate layer over cake layer.
      Baking
      Bake at 350 F degrees until cake is done 45 to 55 minutes, checking at 45 minutes. If center jiggles, bake a few more minutes until center is set. You can cover the edges with foil for the first 40 minutes to keep the crusts from getting too brown if desired.

      @@PennsylvaniacookingBlogspot My mom would make this as a special request for our birthdays. She called it Funny Face Cake. Sprinkled chopped walnuts on top. I have never made it.

    I grew up eating my great grandma’s homemade egg noodles with chicken and chicken broth and salt and pepper oh my god they were amazing we called it chicken and noodles. Her noodles are not wide just thick

    Why do you have to let noodles hang dry before boiling them?

      If you are going to boil immediately, you don't have to but I was taught to do it anyway as they cooked up better for frying that way, not sticking to each other in the pot when cooking and also not letting more starch out.

      My grandma said drying out noodles a bit makes them more chewy when cooked. She would make hers in the morning and let dry until lunchtime when she cooked them. Lunch was the bigger meal. Texture-- not sure if this is true.

      You can either store them in the fridge undried for a couple of days in a ziplock bag, or let them fully dry and store in your pantry fully dried for longer periods.

    Incomplete instructions and tedious drying procedure. At least give an estimate as to how long to knead the dough in the stand mixer. The cutting and unrolling process is ridiculous. Tedious and time consuming. The end result looks more like mafaldine wide pasta that egg noodles. The best cutting procedure is to roll out thin and cut using a pizza cutter. Fast and efficient.
