The way he’s cooking doesn’t get written down. It’s technique leaned over years of actually cooking. He could give you proper measurements and temps and it would take you more than a few tries to get it right. If you want to be an awesome cook you need to study the basics not recipes.
I make boudin probably every couple months and freeze it favorite thing to make is boudin cakes get a big ol handful out the freezer bag and spread it thin on a pan then put that pan on a high heat and sear the cake up so damn goooooood about to make some right now

Just cooked a tomahawk steak…I rubbed it down in mustard and I hit it with that Cajun two step and slapped it on the grill…along with some asparagus, mushrooms, and a big fat sweet potato…and let me tell ya…THATS MONEY DUDE!!! And I stayed hydrated while I waited…but with water though😂😂😂
Take summa dat boudin and fry it in a skillet into a couple of patties den fry you a couple eggs wit da yellow part still runny and put ‘em on toppa dose fried boudin patties…lemme tell you, dats money right dere specially wit some Tabasco splashed on top!

you know a lot of people that kind of frown on livers I love livers but you can't find livers just anywhere at any restaurant and then when you do find it they pull it off the shelf they know they do not no longer serve it nothing wrong with going to the grocery store buying up a couple of tub delivers set one aside for fishing because catfish they really really like chicken livers and I like catfish I'll eat a catfish before I eat any other fish except for a striper or red snapper
I personally have found ways to intentionally cook things ways that longer just so when it's finally ready I'm more than hydrated lol
