Alot of people have been asking why they can't change off performance mode. This means at some point in the past you changed your gameusersettings file to be read-only. You need to uncheck read-only on that file to be able to change your settings.
The file will be in: %localappdata%\FortniteGame\Saved\Config\WindowsClient

This is a very good and in depth video. One thing that is not completely accurate is the uncapped frame rate. Yes initially it will give better input delay, but you are essentially telling your Video Card that it MUST produce these high frame rates to operate. You will notice that your Gpu Temps will rapidly increase, and without the Gpu and intake fans running at max Rpm, in a period of 30 minutes or less you will start to lose Gpu processing power, in-turn decreasing fps and increasing input delay.

Did you test all of these things also checking the 1% and .1% lows? Sometimes you will get higher fps and lower latency, but will not be stable. I would test it again if you didn’t factor these into your tests. Slightly higher latency and slightly lower fps will beat inconsistent latency and fps any day.

Not all systems are the same.
Generally, capping the FPS at 'X' will reduce/eliminate occasional stutter and the associated lag.
Why? Eventually, due to the system operating at full tilt constantly, something somewhere will choke up.
Less of an issue if you have the fastest system out there, but not everybody does.
There are plenty of videos out there that demonstrate this!
