hi, it all looks oh so delicious!! my go to picnic salad thingy is quinoa (cooked and cooled) with a few avocados (mashed and seasoned, kinda like guacamole (i usually put garlic powder, onion powder, ground cumin, paprika powder, chili powder, dried oregano, salt and black pepper) and some pomegranate, topping it all off with some cilantro and lime juice (it really is delicious) 😋 hope you all have an amazing summer filled with delicious picnics🤤🌱

I tried the mini cakes last weekend and brought them to a picknick with friends. First time making vegan cake! I used jam jars, which worked quite well for the transport. They turned out pretty good! Also very cute. Perfect for a picknick :) I'm going to try more vegan baking recipes in the future

Maybe an odd question but the little glass you put the sponge cake in looks a lot like the ones I keep when I buy Rewe Beste Wahl dark chocolate spread (or any of the spreads from that brand). Do you do the same? They come with these super handy silicone lids and i love putting stuff in them to take with me! (Life hack: The lids also fit a standard food can and small yoghurt/creme vega jars perfectly). My tip for anyone living in Germany going to Rewe regularly! These glasses are so practical and we also use them as drinking glasses too :)
I tried the Victoria sponge cake as a big cake. It was quite a disaster. The icing and jam leaked out, so I scraped the filling off and layered it in glasses. Extremely delicious! I would just not recommend trying to make a big cake! 😄🍰
That feta made from marinated tofu is a really interesting idea! I've only tried one vegan feta but I really didn't like how much it tried to taste like real feta, i.e. taste like sheep ^^ I've never liked real feta but I love the 'fake' mild ones made from cow milk. So I really like the idea of possibly recreating that (also, using the liquid from olives makes a lot of sense flavour-wise when you think about it - seems like a great idea!)
