The little rectangular metal piece is called a key. The two slots it fits into are called keyways. Keys and keyways are common for transmitting torque from a shaft to a rotating element riding on the shaft. There are other ways to do it when you need to transmit more torque or have a more precise fit, but keys are simple and effective for light loads.
despite their drawbacks, I find that hand grinders have a certain vibe that makes the coffee more satisfying. almost like the extra physical effort makes the final cup mean more to me. Quality review, as always!
I’ll move to a high quality electric grinder when I find the right one for me, but for now I have absolutely no issues with my 1ZPRESSO. Some days I itch to buy a great electric grinder, but then I realize it’s just coffee culture expectations. Electrics are definitely not needed for home use.
I have tried hario skerton and timemore c2, very good for filter. But after having my flair pro2 I want to try good hand grinders like 1zpresso j max/ jxpro and commandante mk4 redclix but the price is close to a stock DF64 here. And altough I like the process of hand grinding, I dont have much time. Maybe I'll just save more for getting both manual and electric.
I just love the look and heritage of Mazzer. I have a Mazzer Mini that I can not get rid of, because it looks so damned handsome - even being 20 years old. Excited to see them enter the hand grinder market. Fitting that you do the introduction to this sweet piece of kit! Cheers

Im not sure about how it affects longevity, but after 2-4 weeks without cleaning, my burrs feel blunt, making my brews muddier. So cleaning it at least twice a month is all-around a good idea
Really not a big deal for longevity unless you are using super oily beans. Once weekly is nice, but once monthly is fine. Honestly, don't even really need a calendar. If your coffee starts tasting off, do a clean. I always say it is best to keep it clean for the crispiest cups, but do what fits your routine best!

Since you favor clarity, I think you should put the Orphan Espresso Apex grinder at the top of your to-review list. It's a pretty unique 75mm flat-burr (ghost teeth) manual grinder that's also somewhat affordable. I'm curious to hear your opinion on it.
Oh yeah! I am well aware of it! I'm skeptical because of my experiences with the fuji and the xeoleo ghost burrs. Both are 75mm ghosts. I believe the burrs on the Apex are almost identical to the fuji. BUT the fuji runs over three thousand RPM lol. So, perhaps the low RPM drastically will change the cup quality. I have my eye on it, though!

100% agree about the handle stowage when not in use. Wish more manufacturers would be as thoughtful. Not only is it just awkward and take up space, a long imbalanced lever it makes it far too easy to accidentally knock over a grinder on the counter. Feels like we’ve reached a sort of plateau in conical hand grinders in terms of cup quality where any differences are incredibly small… it’s at the point where workflow and design is probably a bigger differentiator for most practical purposes. I’m very curious to see what (if anything) is the next big shift in design or technology advancement for hand grinders.
Well the there is the double burrs technology by Momentum which look promising to me ( the chinese version doesn t seem to stand out though ) and at a 500 $ tag price it will really have to be extraordinary....
echoing Jeremie, double burrs is a big one. But, there is some more than can be done with burr geometry. I might be diving into the arena... Also, eyes peeled for my next hand grinder video

As always, a thoughtful video. I would like to see that magnet handle setup on more grinders. I have a J-Max and, even with the handle off, it's bulky to pack. I'm in my car when I take it places, but I think trying to fly with it would be cumbersome. Also, where's my Super-Like button?!
It's pretty easy to have a packing cube for your grinder with a loop that holds the handle, space for a small cup, some beans, an Aeropress, and a small scale.
what a disapointment :p I had high expectations with this grinder... 33 mm per click is definitivly not ideal to dial in espresso! had to buy the red click for my C40.15mm is ok and i would say maybe slightly smaller would be perfect. Such a nice design though but i would not trade it against my C40 Thx for your review Lance!
Lance… just want to give you a heads up on a 61 mm flat bur strapless grinder that few people seem familiar with The Lud D is manufactured by Mazzer and sold by La Marzzocca 250 watt motor 61 mm burr. And available for 1000 Which I think is a great price for mazzer 61 mm quality

It is a powerful machine with large burrs and the mazzer quality burrs… coffee drops straight down And it is not as large as most high end grinders, and it is designed only for espresso, which is usually a better choice if that is what you want I have not tried this myself, on only considered it because of a friend who got a similar Mazzer grinder to pair with the Marzocco mini… he raved about the Mazzer That said… there are many more affordable grinders..?. Though few of them are specifically designed for espresso And so inevitable come with compromises. I would think La Marrzocco would have be disinclined to make compromises Just my hunch
Great review as always Lance. As an engineer I'm left kinda worried about the carbon fiber handle shaft. Each time you grind you'll be putting quite a bit of torque strain on the shaft. Carbon fiber ususally does not like that... it tends to shatter over time due to built-in material stress. Also I'd be very careful to not drop the shaft or accidentaly hitting it on a edged surface. Say hi to my homeland for me and don't forget to have some Pasteis de Nata. Safe travels.
Agreed! The carbon fiber does bend a bit, and I can't be too sure on the full lifespan, but i've got to imagine mazzer with their reputation have tested this in a way to ensure there won't be any shatters anytime soon haha! We will see! And I have already absorbed like fifty of them lol
Was that a dark, medium, or light roast? I like my 1ZPresso JMax, steps per click are 8.8 microns. Too bad they didn't combine some of the JMax features...it would have been perfect for espresso.
It's really too bad that many grinders with very thoughtful ergonomics tend to not stand out much in terms of cup quality. 1Zpresso seems to do really well in both fronts, so I'd really appreciate a dedicated comparison video to make better sense of the expansive lineup. J-series grinders seem to have better adjustment granularity, but it seems like the K-series are the ones that get attention for cup quality.
I am planning just this! J is geared towards espresso, which is why the micron steps are smaller. K is an all purpose, hence the better clarity. They used to have a filter grinder for the other end of the spectrum, but discontinued it. I have a video on it coming soon.
I have a Mazzer flat burr question. I can get my hands on a pretty cheap Mazzer major and i want to replace the burr set. The SSP is a little bit out my budget so im looking for some mazzer replacements. I found on the internet these types. The basic 151B and 151A, A titanium coated T151A, the 251A and k151B (espresso model found in the new ZM). All 83mm for the 1 phse grinders. I cannot find a lot of info on these, and most of them i can find on ebay under 100 euro easily. Could anyone give me some insight into this?

I believe that the only number of the click distance is not giving all the picture: 33 microns on a poorly aligned, low quality material grinder and burrs are not the same as 33 microns on a very precise grinder. I believe you have a different control on precision. And it also depends on the inclination of the burr teeth, as they widen in oblique, not along the shaft.
hey jack precision of the burrs aside it s still the change of size you get per click. I have the C40 which is 30 microns change per click stock. was a bit tricky to find the right grind size for espresso. I had to buy red click 15 microns and much more easier to find the rigth setting to dial in. K series is 22 mircons per click which seem to be ok . Jmax is 8 i believe . Ideal would be step less i guess

Hey Jack! I am aware of what you say, or are trying to. I have extensive experience with about 15 hand grinders now (just released a massive 1 hour hand grinder video on 10 different ones I tested for 9 months). This one simply doesn't cut it on espresso for dialing in. Gaps are too big, precise or not.
Hi Lance! Thanks for the video. I have an unrelated question but... what would you recommend for water treatment at home? (I'm in the EU like you .) I'm considering the PENTAIR EVERPURE CONSERV 75E to get my own RO water, but the installation is not cheap and I live in the city so it's hard to get it in my kitchen. The daily volume is also complete overkill, I would need 5L per day at the very most. PS I'm in the Netherlands where the water is a little on the hard side but otherwise I *think it's pretty ok. Distilled and demineralised water is not that common here and usually not food safe, so 3rd wave is not practical for that reason IMO. What would be a good solution for high quality but low volume RO water at home?
Honestly, you could just try the Zero Pitcher. No installation required and completely strips all minerals from the water. Sits in your fridhe. Just add your own minerals back to it. I do it. Super easy.
Sounds like the classic Mazzer taste profile, too bad, the build of this was really promising but that’s is only half of a grinder…. Also carbon fibre in a torque part and on a product that potentially get a few bumps is not something I personally wanna see. But thanks for the reviews excellent as always.
For sure. Little bummed by the flavor profile, but can't really expect much else. par for the course. And there is a bit of flex that is unwanted, but it sure does look nice haha!
Is this on a website from Mazzer with specs as to the weight, ht, diameter? (Carbon and titanium is for wt weenies in road bikes and ultra light backpacking.)

This grinder is not so heavy...750g... Aa I see on the web, 1ZPresso k-Plus is 800 g, Kinu M47 is 1,1 kg..... And this is all made of metal.... I think you can backpack it
Mazzer but comes with that small burr set (btw that burr looks so aweful with so many holes from the bottom), they should have made their first hand grinder like Helor 106/163.

Personally do mine once a week or after 30 mills, whichever comes first.
I clean mine every time I switch to a new bean which is about once a week. Otherwise if I didn’t buy different beans all the time I’d say weekly then.

Carbon fiber ususally does not like that... it tends to shatter over time due to built-in material stress. Also I'd be very careful to not drop the shaft or accidentaly hitting it on a edged surface. Agreed! The carbon fiber does bend a bit, and I can't be too sure on the full lifespan, but i've got to imagine mazzer with their reputation have tested this in a way to ensure there won't be any shatters anytime soon haha! We will see! And I have already absorbed like fifty of them lol

Was that a dark, medium, or light roast? I like my 1ZPresso JMax, steps per click are 8.8 microns. Too bad they didn't combine some of the JMax features...it would have been perfect for espresso.

It's really too bad that many grinders with very thoughtful ergonomics tend to not stand out much in terms of cup quality. 1Zpresso seems to do really well in both fronts, so I'd really appreciate a dedicated comparison video to make better sense of the expansive lineup. J-series grinders seem to have better adjustment granularity, but it seems like the K-series are the ones that get attention for cup quality.
I am planning just this! J is geared towards espresso, which is why the micron steps are smaller. K is an all purpose, hence the better clarity. They used to have a filter grinder for the other end of the spectrum, but discontinued it. I have a video on it coming soon.

I have a Mazzer flat burr question. I can get my hands on a pretty cheap Mazzer major and i want to replace the burr set. The SSP is a little bit out my budget so im looking for some mazzer replacements. I found on the internet these types. The basic 151B and 151A, A titanium coated T151A, the 251A and k151B (espresso model found in the new ZM). All 83mm for the 1 phse grinders. I cannot find a lot of info on these, and most of them i can find on ebay under 100 euro easily. Could anyone give me some insight into this?

Though the Etz comes together nicely, it feels a bit cheapy when in comparison with this. And considering the retention the etz experiences with espresso, I personally swing Mazzer between the two

I believe that the only number of the click distance is not giving all the picture: 33 microns on a poorly aligned, low quality material grinder and burrs are not the same as 33 microns on a very precise grinder. I believe you have a different control on precision. And it also depends on the inclination of the burr teeth, as they widen in oblique, not along the shaft.
hey jack precision of the burrs aside it s still the change of size you get per click. I have the C40 which is 30 microns change per click stock. was a bit tricky to find the right grind size for espresso. I had to buy red click 15 microns and much more easier to find the rigth setting to dial in. K series is 22 mircons per click which seem to be ok . Jmax is 8 i believe . Ideal would be step less i guess

Hey Jack! I am aware of what you say, or are trying to. I have extensive experience with about 15 hand grinders now (just released a massive 1 hour hand grinder video on 10 different ones I tested for 9 months). This one simply doesn't cut it on espresso for dialing in. Gaps are too big, precise or not.

I have an unrelated question but... what would you recommend for water treatment at home? (I'm in the EU like you .) I'm considering the PENTAIR EVERPURE CONSERV 75E to get my own RO water, but the installation is not cheap and I live in the city so it's hard to get it in my kitchen. The daily volume is also complete overkill, I would need 5L per day at the very most.
PS I'm in the Netherlands where the water is a little on the hard side but otherwise I *think it's pretty ok. Distilled and demineralised water is not that common here and usually not food safe, so 3rd wave is not practical for that reason IMO.
What would be a good solution for high quality but low volume RO water at home?
Honestly, you could just try the Zero Pitcher. No installation required and completely strips all minerals from the water. Sits in your fridhe. Just add your own minerals back to it. I do it. Super easy.

With those burrs, it's baffling why the adjustment ring was designed for filter instead of espresso. Each click should have been 5 microns!
