Personally would keep the shells without cream in airtight container away from moisture (not next to oven or appliances emitting heat). Shells with cream, if going to be consumed within 2 weeks I'd keep them in the fridge in airtight container but keep in mind shell texture changes the longer you keep them in the fridge. I would put them in the freezer after filling them if you're preparing for a large bulk order or if not going to be consumed within 3 weeks. I think they're good in the freezer up to 6 months
