- The name "Hobz biz-zeit" means in English simply "bread with oil" but there is much more to it than just that. Thick slices of bread are spread with the beloved sweetish tomato paste called kunserva and topped with capers, olives, garlic, black pepper and a drizzle of olive oil. Sometimes tuna or anchovies are added.

We used to make hobz biz zejt every day at the beach and it's still one of my favourites we put capers in the holes in the bread,maltase bread has lots of holes , before rubbing the tomatoes in....the best! BIG LOVE! ❤

Wow! I haven’t had my breakfast yet.. and after watching this..l must have hobz bizzejt or as near as l can get t in Nottingham!, this used to be our favourite picnic when we went into Valletta. There used to be an old kiosk to the right of the main entrance where we would buy a huge one and the lady would cut it in two and bag it separately for us and it would only be one euro!, we would sit under the fountain o sometimes walk to the upper Barracca gardens to enjoy the view of the Grand Harbour. I love your videos..they bring back so many wonderful memories for me. Keep going please.

Aloha my friend, I love hobz biz-zejt. The way my mom use to do. Cut all your bread slices. Pour some olive oil in a plate, then did each slice in the oil, then spread the tomato paste, then get a juicy tomato and squeeze it on the slices, add lots of pepper, salt, take a tablespoon of capers and chop it up, then flake come tuna on it.

A nice crusty loaf, sliced in a rustic fashion, smear with tomato puree, some ground black pepper, nice oil and capers scattered. Perhaps a fresh green chilli on the side.

I use to live in Qormi Rapheal strret no i was 10 years old when i left Malta. I can remember a lot of things Dad was in the English Army. We saw him every forthnight he got a George Cross medal. Hope i can write this.

You could use chopped fresh mint and basil,white beans and tuna,and peppered gbejna. Glad you enjoyed one of the most loved Maltese snacks.And well done for your Maltese words,very well pronounced.

people always seem to put the tomato paste on first?........I pour the oil on a plate then dip the bread into it then a little tomato paste sliced tomatoes little red onion small pieces of bell pepper ,and lots of fresh chopped mint, salt and black pepper , it is absolutely delicious.

Many years ago it was traditionally made with fresh tomatoes however when tomatoes weren’t in season or unavailable then tomato paste was more like a substitute

Oil in a plate. Spread with kunserva or tomatoes, then dip in oil (or use left over tomato skin or a small piece of bread) to spread the oil. The 'real secret' is the oil dip and the quality of the tomato concentrate. Arguably the best part would be that small piece of bread used to dip and spread over the rest of the bread - it is soaked in oil and some transferred kunserva.. Basil, pickled onions, local olives and capers make it tasty too.
But you're right everybody has his own way..My wife would do it like you did..little oil.. The majority would prefer it dripping in oil.

Good video Steve, you give plenty of ideas for people to try. I only like fresh tomatoes and Maltese bread but my husband would love the rest as well. I love onions but they kill me and so does garlic, I really dislike olive oil, olives and capers. I envy everyone who enjoys all types of food, unfortunately I don't and I feel I am missing out on so much. I used to make it with my friends as they liked it, by pouring olive oil on a plate and the bread would soak up the oil after really scrubbing the fleshy part of a tomato on first, loads of black pepper and then a chopped herb, but I can't remember which one, that was many years ago as a teenager.
Normally they put mint and parsley just forgot the mint it was right behind me ..lol and could not find any parsley ...Yes i remember some people putting the oil first on the plate ..But there are so many ways ...

Yep looks very tasty, although, you've got to go a long way to beat an open stotty with ham and pease pudding. Oh great view from your balcony, the wife wants to see a wide shot of your view.

@@EnglishmaninMalta Traditional northern fayre, you can only get stotties up north, its a round flat soft bread, very tasty, a staple of the north east for 100's of years.If you want to see it google ,stotty with ham and pease pudding.
When you use tomato make sure they’re old tomatoes as they have more juice so tend to be a little sweeter and easier to spread normal veg oil is just as nice the seasoning is crucial , I also love chopping a onion green olives some fresh tomatoes all mixed into tinned tuna then place it on the bread .

I’m very happy you love Malta and Maltese traditions as they can die out with young generation, you should do octopus cooked slowly in tomato sauce but that needs planning lol

Yes it’s like making a Bolognese sauce but with either octopus or squid plenty garlic bay leave mixed herbs nutmeg and some red wine tomato purée sauce slow cook until octopus is tender melts in the mouth , serve with spaghetti garlic bread flavour is gorgeous.
