A proper Baleada is supposed to have Central American cream, red refried beans, salted cheese, fried plantain, over medium egg and a piece of meat inside of the biggest flower tortilla you can find and then just fold it over like a massive taco on hellacious steroids. Bean and cheese is too simple. You at least need the cream. And the cheese Has to be a fresh salted cheese we call cuajada which is almost exactly like Mexican queso fresco except that they added salt to it when they made it. It is supposed to fill you up for hours. My grandmother told me that they used to give them to the farmers in the morning when they went out into the fields so that they would have enough energy to do all the work they needed to do before they came back for lunch. In some parts of the country, they call it a burra. Either way, it’s absolutely delicious and one of my favorite dishes in the whole wide world.
