Also cut your flour that you put chicken in to make it crispy with potato starch. 4 to 1 ratio. (Flour to potato starch)It will make you fried chicken so much crispier!
In korea they only use potato starch and zero flour. Gets even crispier but you need to dunk it into marinade after coating

I do this with corn starch and it’s sooo amazingly crispy.

Grew up using tapioca starch in the restaurant. Potato starch not easily available here also tapioca getting harder to find

My guy, go to a Korean market. You'll find at least 3 different brands.
In Poland potato starch is everywhere and corn starch is harder to find so I've never even tried cooking with corn starch xD

I'm a home chef and I've been using potato starch for a few years. Once you get used to it, it's the goto for thickening
I'm very glad about my laziness. I always assumed both had the same effect when used as a thickener, but I opted to JUST have potato starch in my oantry mainly because I prefer it when it comes to frying, the texture is IMO superior to cornstarch (I understand you're supposed to have a certain ratio when for dry mix when frying, but idgaf).

my great uncle is from china and owned a popular chinese restaurant for 18 years before he sold it, an actual quality chinese restaurant not one of those americanized take-out places. he used and still uses corn starch in his sauces.

Interesting! Was working in a resteraunt that used Corn starch. However the chef wanted that sauce to have that thick viscosity so doesn’t move on plate.

This is not true, different starch works well with so many different dishes. Some dressing or sauce may required corn instead of potatoes.
If you make the mung bean dessert "tau suan", use potato starch.

I use corn stratch for frying lol but potato stratch is king for soups and stews
I used cornstarch one time to make gravy. It works. But the left over gravy thinned out a lot after cooling down.
