    Also cut your flour that you put chicken in to make it crispy with potato starch. 4 to 1 ratio. (Flour to potato starch)It will make you fried chicken so much crispier!

      In korea they only use potato starch and zero flour. Gets even crispier but you need to dunk it into marinade after coating

    Grew up using tapioca starch in the restaurant. Potato starch not easily available here also tapioca getting harder to find

    I'm very glad about my laziness. I always assumed both had the same effect when used as a thickener, but I opted to JUST have potato starch in my oantry mainly because I prefer it when it comes to frying, the texture is IMO superior to cornstarch (I understand you're supposed to have a certain ratio when for dry mix when frying, but idgaf).
