Our except coconut oil specially sunflower, mustard, peanut as edible oil. Coconut and tiloil as only hair oil, body oil besides other hair oil. Non can imagine in dream also coconut oil as edible oil.Your Keralaite every thing is specific , unique and identical of Keralaite only. Very nice tradition and culture. I also notice too much use of both dry and green chili use , our is too less , we can not eat that much use chili foods. Your totally different. Very beautiful Keralaite tradition and foods recipes , identity of Keralaite people. Indeed most beautiful.

We do make this payasam in coastal Karnataka too with jeera rice (we call it saNNakki). But to make the payasam do we need any special variety of rice? Rice you used seems to be bit different.
Yha it is different....it is called "unakkalari " in Malayalam...i don't know whether it is available in Karnataka or not..you can use jeera rice/dosa rice for this...
