You are a great instructor . Everything covered. Nothing wasted. Even fed the corn and mater's. I use a linoleum knife for making the cuts through the skin. The hook and large handle make the knife easy to control, and it saves the edge on the fillet and boning knives. Lotsa uses for breaking down all sorts of critters really. Try it and l think you'll like it.

here's a trick... the outer black color of the catfish is best removed with water under high pressure... I took the catfish to a friend who has a car wash, put the catfish on the floor and he bleached the catfish with water under pressure to make the catfish white as snow. ..all that outer black skin comes off in a few minutes... the catfish remains white as snow.... try it, you won't believe it...

Never a serrated, until using the filletzall. I can’t argue it. 60-70 large offshore fish w 2 guys in 45 minutes. That would be 3 hours usually.

I always bleed them first thing even when they're already dead. Even then it gets rid of alot of the excess blood and you don't get all that red coloration in your fillets. if you clean big fish right you can't tell any difference between them and smaller cats. Except for channel cats. Big channels seem to always taste like mud hahaha
