Hi Anne, I learned how to boil eggs from an expert who worked in a test kitchen. Eggs can go directly from the fridge into very hot water without cracking. When eggs are in a pot of rapidly boiling water they collide with each other and that's why the shells develop cracks. The fool proof way to boil eggs is to bring the water to a rapid boil then turn the burner to the lowest setting. When the rapid boil slows down to almost not boiling then put the eggs into the water and put a lid on the pot. Let the eggs sit in the pot for 13 minutes then plunge them into ice water for at least 15 minutes. The eggs will be perfectly cooked, no green around the yolks and very easy to peel. No matter how easy the eggs are to peel I always uses a teaspoon to peel them because it's so much easier than using fingernails and the spoon can be easily slipped under the shell. I wouldn't have mentioned this if I didn't understand that you are already an accomplished artist. I am much much older than you and I still value new tips so I hope you think kindly of me. I do love you channel a lot and I recommend it to others. Bye.
