A little late but somebody might benefit from my comment. Wusthof (and Henckels) have a very good warranty on their upper end lines. Those black (and white) plastic handles from the 1970s and up did degrade over time and as long as there's no *obvious* user error in the damage those knives are replaced by the companies through their warranty. Just be aware that the 'exact' same knife model may no longer be in stock so you might get a similar, more recent model.

Looking to do very similair rehandle to my 20 year old wusthof x 7 knifes. I plan to use Colby bolts - which doesn’t need to be peened and should allow a perfect self locking/clamping fix.

that sounds like a much better solution. I had the brass in stock and wanted to see how it looked before trying it on a more important knife down the road.

Also, everybody PLEASE tape the edge when handling your knives. That'll save you from a nasty cut.
