loved your video. wish i had seen it 2 days ago! i love making cupcakes for friends but could never figure out how to coordinate the different steps and i was constantly washing bowls and spatulas and mixer parts!! i baked and decorated 24 cupcakes today and i am completely exhausted and still have one more sink full of bowls, etc to wash!! next time, i will do it YOUR way!! i love the way you made the tops ahead of time and just stuck them on!! you are a genius and a very good teacher. thanks for posting your videos!

I think your best tip was to start at least 3 days ahead and do one of the tasks each day! Make buttercream decorations and refrigerate day 1, make cupcake/cake day 2. Then put on decorations day 3. Makes things much more relaxed. That's what I'm doing for my child's bday this year. Except I did the cake on day 1. Frosting the cake on day 2 and made a huge batch of frosting. Once that is done, I will use the leftover white frosting, divided into bowls and then color each one. Tomorrow I'll do the design stuff. I learned about Russian tips too late. So just using basic tips. And I'm not very good at it either. I can't wait to try the Russian tips next year though!

Yolanda, it seems like the frosting is sticking to the tip and pulling some of the flower off. If you wipe the tip after each flower, I think you will get a more uniform look. Beautiful work by the way. thank you for taking time to share your work.

Hi Nancy. I usually stand when piping. Another tip is to lightly frost your cupcakes first before you pipe the flowers; in this way the piped flower will attach itself to the frosting on the cupcake. Happy decorating!
Wonderful video, I just got my Russian piping and Russian ball tips in the mail and can't wait to use them. Can you leave the flowers in the freezer overnight? How long does it take them to thaw out once you place them on the cupcakes? Thank you
Hello! Glad you got your piping tips. They are fantastic. You may freeze the flowers overnight. Once you place them on your cake do not remove or handle them with your hands as the warmth of your hand will soften them. Don't leave them out on your for more than 3 hours. Hope this will help!.

What consistency is your buttercream for the rosettes? I have the set that has the rose tips but not the ball tips. Just didn't know if that was stiff consistency as well.

Hi Connie. Thanks for asking--remember I said; first day make buttercream and refrigerate (buttercream can be refrigerated for days and it keeps fresh); second day make your cupcakes --they will do fine covered on your counter and; 3rd day you decorate. Happy baking!

They soften up. You should keep the cupcakes in the fridge until an hour or so prior to serving if it's too hot or humid. If not, then they will be okay on your table.
I love those Russian tips but if doing cupcakes I spread frosting all over cake before putting flower so it protects cake from drying out.I can see some of bare cake on sides. If cupcakes being ate same day then it probably would not matter.

finally finished my cupcakes this morning but when i took the "fancy" 2 tier cupcake carrier i bought out of the fridge to put the last 2 inside it, the bottom fell off and all my cupcakes fell in the floor. no survivors. just finished making and icing them all again (its 10:30pm!) so i wondered how you transport your beautiful cupcakes? please advise. thanks so much.
Good morning Nancy. I am so sorry for your cupcakes. Things like this always happens. You are not the only one that they happen to, trust me, I've had my share of similar situations and even worse. It even happend to Cake Boss in one of his episode! But no worries, like they say, "live and learn." To transport your cupcakes, you can either buy cupcake carriers, or put them in a shallow box, so you can handle them easily. Good luck. Have a blessed day!

Hello. Thank you!. I usually keep them in the freezer for 1 hour or so, just before placing them on the cupcakes. However, you can freeze the flowers for a day or so. I don't think you will encounter any problem.
It will be soft-medium, that's why you should not try to move them off the cake or change them from one spot to another. Once they are placed on the cake they need to not be disturbed.

Hi June. This recipe usually makes 18 cupcakes using 2 1/2 tablespoon of batter only. If you use 2 1/2 tbs you will get perfect rounded tops. So, I would make three batches first. Then if you need more make 1/2 of the recipe for the rest, but I think three batches will be enough. Good luck. Blessings.

finally finished my cupcakes this morning but when i took the "fancy" 2 tier cupcake carrier i bought out of the fridge to put the last 2 inside it, the bottom fell off and all my cupcakes fell in the floor. no survivors. just finished making and icing them all again (its 10:30pm!) so i wondered how you transport your beautiful cupcakes? please advise. thanks so much.
Good morning Nancy. I am so sorry for your cupcakes. Things like this always happens. You are not the only one that they happen to, trust me, I've had my share of similar situations and even worse. It even happend to Cake Boss in one of his episode! But no worries, like they say, "live and learn." To transport your cupcakes, you can either buy cupcake carriers, or put them in a shallow box, so you can handle them easily. Good luck. Have a blessed day!

Hello. Thank you!. I usually keep them in the freezer for 1 hour or so, just before placing them on the cupcakes. However, you can freeze the flowers for a day or so. I don't think you will encounter any problem.

What will the icing's consistency be once the flowers thaw? It won't be like royal icing, correct?
It will be soft-medium, that's why you should not try to move them off the cake or change them from one spot to another. Once they are placed on the cake they need to not be disturbed.

Hi June. This recipe usually makes 18 cupcakes using 2 1/2 tablespoon of batter only. If you use 2 1/2 tbs you will get perfect rounded tops. So, I would make three batches first. Then if you need more make 1/2 of the recipe for the rest, but I think three batches will be enough. Good luck. Blessings.

You can use any buttercream as long as it is of a stiff consistency.
