@@rgtmoto I cut meat for a living and I think getting a razor sharp blade is very important but it’s major skill to keep um like razors, always a fight.
@rgtmoto word of advice, definitely want to learn how to steel your knife. Especially in the long hall, as you get older your hands are going to hurt.
