  • "Lauki Do Pyaaza" is a popular Indian dish made with bottle gourd (lauki/doodhi) and onions (pyaaza). It's a vegetarian curry where the bottle gourd is cooked with a generous amount of onions, tomatoes, and spices. The name "Do Pyaaza" refers to the cooking style where onions are added in two forms: sliced onions and either onion paste or finely chopped onions, giving the dish a rich and textured flavor.

    Ingredients Quantity
    Oil 2 tbsp
    Bay leaves 3 no
    Cumin seeds 1 tsp
    Bottle guard 1 no
    Dry red chilli 4 no
    Onion chopped 2 no
    Ginger garlic paste 1 tbsp
    Tomato chopped 2 no
    Salt to taste
    Turmeric powder ½ tsp
    Red chilli powder ½ tsp
    Coriander powder 1 ½ tsp
    Garam masala ½ tsp
    Kasuri methi ½ tsp
    Water as required
    Green chilli slit 3 no
    Ginger juliennes 1 inch
    Water 1 cup
    Onion diced ½ no
    Tomato diced ½ no
    Capsicum diced ½ no
    Tamarind paste 2 ½ tsp
    Coriander chopped 3 tbsp
    Method :-
    1. Place a kadai on medium flame and heat oil. Add bay leaves and cumin seeds let them splutter.
    2. Rinse them well and Peel the bottle gourd (lauki), remove seeds if they are too hard, and cut it into medium-sized cubes and set aside.
    3. Add dry red chilli and chopped onion sauté until they turn golden brown.
    4. Add ginger garlic paste Sauté for a minute until the raw smell disappears.
    5. Add chopped tomatoes and salt cook until they turn soft.
    6. Add turmeric powder, red chili powder, coriander powder, garam masala and kasuri methi. Mix well and cook the masala for another 2-3 minutes.
    7. Add green chilli slit, ginger juliennes and cubed bottle gourd (lauki) to the masala. Mix well so that the masala coats the lauki pieces evenly.
    8. Add water and Cover the pan with a lid and cook on medium-low heat for about 12-15 minutes or until the lauki is tender. Stir occasionally to prevent sticking.
    9. Add diced onion, diced tomato, diced capsicum and tamarind paste mix well.
    10. Now add chopped fresh coriander and mix well.
    11. Side out in serving bowl and enjoy hot lauki do pyaaza with paratha
