मेथी के थेपले
मेथी के पत्ते - १ बंच (१२५ ग्राम)
धनिया के पत्ते - १/४ कप
हरी मिर्च - २, कटी हुई
अदरक - १ इन्च
लहसुन - १० से १२ कलियां
आटा - १ कप
मैदा - १ चम्मच
बेसन - १/४ कप
कसूरी मेथी - १ चम्मच
खाद्य तेल - २ चम्मच + १+१ छोटा चम्मच + पकाने अनुसार
नमक - १ छोटा चम्मच
लाल मिर्च पाउडर - १/२ छोटा चम्मच
हल्दी पाउडर - १/२ छोटा चम्मच
धनिया पाउडर - १/२ छोटा चम्मच
अजवाइन - १/२ छोटा चम्मच
दही - १/४ कप

Methi Thepla
Fenugreek leaves - 1 bunch (125 gm)
Coriander leaves - ¼ cup
Green Chilli - 2, chopped
Ginger - 1 inch
Garlic - 10 to 12 cloves
Wheat flour - 1 cup
All purpose flour - 1 table spoon
Gramflour - ¼ cup
Fenugreek leaves (sun-dried) - 1 table spoon
Edible Oil - 2 table spoon + 1+1 tsp + to cook
Salt - 1 tsp
Red Chilli powder - ½ tsp
Turmeric powder - ½ tsp
Coriander seeds powder - ½ tsp
Ajwain - ½ tsp
Curd/ Yogurt - ¼ cup

There is a reason why I chose to write to you now.. I tried out your Methi Thepla recipe 3 days back. I made a huge batch of them to pack it for the train journey for my son, who was to travel from Chennai on 31st Dec to attend the 18th National Jamboree for Bharat Scouts and Guides held at Pali, Marwar, Rajasthan which will be inaugurated tomorrow (from Jan 4th till Jan 10th 2023).. Your were the one, whose recipe I would go to! Needless to say, the Theplas stayed absolutely fresh, soft and tasty throughout his journey and he savored it till yesterday!😋

I made these phenomenal theplas! Aunty's explanation and recipe is absolute brilliance. I couldn't believe the remarkable result was directly from my kitchen, and not the market. You can reduce the oil and not make it so soft dough also. That will make it easier to handle the dough without it being as sticky
