After I cut it, I let it dust with flour, twist it into a bird's nest and let dry. You can store them in a zip lock or other air tight container. I have a big zip lock container so it doesn't get crushed. It can also be frozen, though I usually don't do that because it doesn't last that long!
I made fresh pasta for the first time last week. It was terrible - mixture was too dry and I couldn't roll it thinly enough. So, I was interested to see you adding an extra egg yolk (I used 3 eggs, 300g 00 flour, but the eggs were small). Think I'm going to invest in a pasta machine!

I totally agree with you about the dusting with flour makes it gummy. I'm going try it with semolina, and betting it comes out way better

I add a little bit of oil. I toying that softens the dough play be 1 or 2 teaspoons. Also a small amount of water will help.
i know my luck with electrical devices ... i stick with manual once ^^
Works just as well! We used to use manual all the time 🥰
