My wife cans and has for years, but we are in our seventies. This video makes me optimistic that at least some of the younger generation is keeping this old tradition alive. That kitchen is awesome.
Wonderful! That's the way to do it. Reminded me of summers when I was a kid in the 50s and my mom and grandma would can bushels of veggies and fruit from our garden and trees. Love how your children pitch in and help with tasks they can handle, much as we did then. That's an incredible set up you have there too. Wish you and Paul all continued happiness and success!

I love making pickles each year. Try pickling your other veggies like green beans and cauliflower. Growing your own dill is also a treat. Good for you !!

Do you think one big stove has an advantage or could two smaller stoves give you more elbow room? I'll probably start with one stove and it will be the cheapest thing I can find and convert to propane but it will mainly be used for searing meat and prepping sides.
I think it depends on the situation. I love the larger cooktop since canning pots are usually oversized- gives more room for them to heat properly. A regular 30" range usually doesn't heat as fast or as evenly.

Pressure canning does more cooking, so you need to do that for some items like canned meat, etc. Acidic vegetables need more of a seal so the water bath method is usually the recommended procedure. We'll do something with our pressure canner this season and show it. Deer processing is on our list too!
Good rule of thumb is to use things up within a year or so. We might have overdone it on the pickles, but if they're tasty they'll come with us every time we visit friends haha

Yes! We are planning the pantry and storm shelter to be storage places since we're trying to have a year's worth of food stored up!

We totally did... after we installed the radiant heat! We kinda wish we had converted the pantry to be a walk in cooler.

They have hvac system
We'll add an exhaust, but we don't have any problems given all of the windows and doors and space.
