ENCHILADA CASSEROLE
1 lb ground beef
taco seasoning
1 onion chopped
corn tortillas
shredded cheese
Enchilada sauce
-cook ground beef with taco seasoning first and set aside. Grab a 9 x 13 casserole dish and put a little bit of enchilada sauce on the bottom. Put one layer of corn tortillas, then taco mixture, then, onion, then shredded cheese. Repeat these layers until four and then cook in the oven at 375 for 15 minutes
SKINNY SPAGHETTI
1 lb ground beef
1 jar spaghetti sauce
italitan seasoning
1 lb spaghetti noodles
1 spaghetti squash
- Cook your ground beef in a skillet with Italian seasoning and add spaghetti sauce. Cook your spaghetti noodles like usual and set aside. To cook the spaghetti squash you’re going to cut it in half and spray with nonstick spray. Take out the seeds in the middle. To cook in the instant pot you’re going to put one cup of water in the bottom. Put a tray at the bottom. Season the spaghetti squash with salt and pepper, and then place inside the instant pot and cook for six minutes. When it’s done, you can shut it with a fork and top with your sauce.
POTATOES AND SAUSAGE
1 lb kielbasa sausage
5-7 golden potatoes
butter or oil
uncle chris'
shredded cheese
- Wash the potatoes and cut into bite-size bites. Add into a skillet with butter and uncle Chris’s seasoning. Cut the sausage and added to the skillet as well as let Cook in the butter. When the potatoes are soft, you can talk with shredded cheese and enjoy.
SHRIMP ALFREDO
frozen shrimp
1 lb spaghetti noodles
2 tbs butter
1 tbs minced garlic
1 alfredo jar of sauce or homemade
- Add the frozen shrimp that is thawed in a skillet with butter and garlic and Cook. Madden cooked spaghetti noodles and Alfredo sauce and enjoy. Top with Parmesan.

My family loves the corn tortilla enchilada casserole- I add a can of each corn, black beans and diced tomatoes to the meat and stir in some of the enchilada sauce (reserve some for the top) then layer with cheese - oh so good
I think you’re the 1st RUclipsr I’ve seen use layered corn tortillas for enchiladas and I’m stoked! I’ve only ever used corn tortillas and always thought using the flour ones made “wet/smothered burritos”.

Yes green chile chicken is my favorite kind! Grew up making that over red chile and my husband likes red chile beef best lol. We’re both NM born and raised 😊
