I ended up installing this on my 22” Napoleon kettle grill. Just grabbed a few (6) bolts and after lining it up and drilling a few holes, I was able to mount it pretty nicely! Had to move the gasket around the bolts a bit, but no big deal as everything sealed up pretty well. What a game changer of a device…!
Interesting that your charcoal didn't last. I've done 2 overnight cooks with my venom so far. I'm using a Slow N Sear (water reservoir filled) with the drip pan from SNS. Started my coals similarly with 12ish briquettes on one end then loading it up. Easily got 12 hours out one load of Kingsford Original both times at 225.
Nothing special about the probes. A meat probe that came with my traeger was of very similar quality. Not sure if this helps you any if you don’t have one 😅 If they go out, might as well pick up some nice wireless food probes. A few good options out there like meater probes.
I’m getting some crazy swings from 20-30 degrees up and down. Is that normal? Should I be filling up a chimney with coal? I’m also using the slow n sear.
You'll always have some variance, but it is usually pretty consistent. Wind and varying weather conditions are the hardest to overcome with a controller or on your own.
Same here. I cooked a brisket yesterday with the venom and slow n sear and was getting crazy swings as well. It wasn't the best brisket, but I also cooked at 275 degrees, so that could be the case of user error.
What I’ve found is there is a huge difference in time taken to adjust temperatures based on the size of the heat source. So if you have a lot of charcoal lit, it is quicker to react to vent changes than if you are using a snake method where there are only a few lit. I guarantee this product doesn’t know the difference, so when a lower vent adjustment may take 10 minutes to stabilise the unit will keep chasing it’s tail. Hence the temp overshooting both sides of the target temp.
I'd put it opposite the fan so the ash doesn't drop down on it. If you cover the side of the grate opposite the SNS, the air will still get forced through it.
I got a Spider Venom a couple of months ago, and have been recommending it to everyone who has a kettle. Taking time to figure out the vents and constantly fight them just isn't for me-and I know it's the thing that most people really dislike about using their kettles. Coming from a pellet smoker, I LOVE the Venom and its ease of use. In fact, funny to see you doing a brisket, because I'm planning to do my own brisket on the kettle with the Venom next weekend. Can you tell me how long yours took from start to finish? Just curious what I might be looking at time-wise.
It took 16 hours using the foil boat method and was probably an hour overdone. It never got past 197F so I was convinced it needed more time. If you wrap it completely in foil it's more likely in the 10-12 hour range. On a cook that takes that long it's nice to know it does the work for you. Thanks for not selling it and going to a BBQ restaurant instead.

I just received my Venom today! Does the ash tray need to be dumped prior to every cook? I'm worried that the blower will move any ash in there up and all over your cook.
Congrats on the new purchase. You'd have to get it overfilled before the ash would get up to the blower vent. I'd empty it everytime you do a long cook, but you should get a few weeknight cooks before having to dump it.

When you rest, add a piece of foil to cover the brisket. After a 5 or 6 hour (or longer if possible) rest, you have amazing, thick, soft fabulous bark. Thanks again!
Owning a car isn’t necessary, but you probably own one and probably paid a lot more than the $199 Venom costs. If you want good bbq on a kettle grill and want it to be super easy, the Venom actually IS necessary.
A charcoal grill you can walk away from is a BIG WIN. Screw what anyone says.

Thanks for the data point. I might not have filled it enough. It also gets pretty windy at night and I'm sure that didn't help.

Brisket turned out great! Fat was well rendered and the bark was just a tad too crispy. Point muscle had great texture too didn't look like mush. 👍
Exactly. You could tell it was a little crispy when I was trying to slice the flat. I might come back to that method, but I like a little faster cook.

I’ve read where som folks have turned down the Venom to keep the from blowing too much ash, then returning to the original temp.

Unfortunately, no. It's designed for a three legged kettle and the SNS has four legs.

is it better to configure the slow and sear opposite of where the spider venom fan controller is to keep a more stable slow and low temp?
I haven't tested it on different sides. I was thinking more about not having meat juices drip into the fan and covered up the bottom grate with foil.

The "P" label on the first temp probe port does not stand for "Probe", it stands for "Pit".
