My delicious Guatita recipe:
• Guatita Ecuatoriana
INGREDIENTS:
3 plantains
1/2lb cheese
1 cup milk
½ stalk green onion
½ red onion
¼ green bell pepper
½ tomato
3 garlic cloves
½ teaspoon annatto
1 handful cilantro
Water
RECIPE:
Chop the green and red onions, tomato, green pepper, garlic, and cilantro very small. Set it aside.
Peel and chop the plantains into big chunks.
In a big pan add oil to fry the plantains.
Fry them for around 2 minutes and flatten them.
In a pot add a little oil and annatto to heat up.
Add the chopped vegetables to sautee for a couple minutes on medium heat. Add water and let boil.
Now we add the patacones so they finish cooking, the milk and cheese. Let cook until the patacones are fully cooked.
To plate garnish with some cheese and cilantro.
