BASIC VANILLA CAKE RECIPE FOR BEGINNERS (EGGLESS) // Easy Vanilla Cake For Beginners

VANILLA CAKE SPONGES (MAKES 2 6-INCH CAKE LAYERS OR 1 8 INCH )
150 grams yogurt
150 grams milk
2 teaspoons baking powder
1 teaspoon baking soda
300 grams all purpose flour
250 grams caster sugar
120 grams salted butter, room temperature
2 teaspoons vanilla extract
Preheat oven to 160 C / 325 F for 15-20 minutes, bake for 40 - 45 minutes or until a skewer or knife inserted in the centre of the sponges emerges clean.
Let it cool completely to room temperature before frosting the cake
10 MINUTE VANILLA FUDGE FROSTING
150 grams fresh cream (25% fat)
120 grams salted butter
250 grams sweetened condensed milk
1 teaspoon vanilla extract
Cook on high first until all ingredients combine and the butter has melted. Then turn the heat to low and cook for 10 minutes, stirring all the time. It will thicken up considerably but still be slightly runny. As it cools down, it will become thick and fudgy, the perfect consistency for frosting the cake
NOTE: Even if you notice that some of the fat from the butter is forming a layer while cooking, it is completely fine! Follow the exact instructions and leave to cool as it cools down, it will thicken and your fudge frosting will be fine! The quantities mentioned are accurate and I've put up this recipe after a lot of testing!!!

Just a suggestion, after taking the frosting out of the fridge, when it is more thicken up, then if you will beat/whip that for a while, it becomes too much fluffy and pale and soft. Definitely try this on the next cake, so that your followers will also know about this.

This is now my go-to vanilla sponge recipe. Tried so many, even paid for one, but this was by far the best! The only thing is, my cake turned out a bit dense. Would have loved it to be a bit more airy. What can I do differently?

Roughly 1 cup is 120g. So it is 1 1/4cup yogurt and milk,2.5 cups maida,2 cups sugar and 1 cup butter (amul butter packet is 100g usually)

Hi Shriya, I usually don't prefer cups as they are not the most accurate way to measure your ingredients. With metric measurements, you know your ingredients weigh the same every single time and the baked goods turn out consistent! I hope this helps!

Once you take it off the heat and transfer to a bowl to cool completely, you can add the gel colour, give it a good mix and let it cool down completely. Mix well again once it has cooled completely and thickened. Hope this helps! x

Tried this sponge,didn't except this much soft sponge and lite... Very yummy. May I know the logic behind mixing butter in flour? Adding baking soda to curd, chemical reaction starts and bubbles come. Similar can u do explain the logic wht magic butter is making when coated with flour. Also quite scary to mix using whisk. Usually I follow cut and fold method. But this time I followed Ur style and it is superb. Wish to understand the logic to understand baking much better
