The Easiest Chinese Black Sesame Paste (Cheater's Version)

  • Black sesame paste is a classic Chinese dessert. Usually ground with rice in a stone mill, this is an easy hack version that you can make any day. All you need are black sesame seeds, peanut butter, sugar, and water. Super easy and delicious.
    Ingredients
    1 ½ cups Black Sesame
    1 ½ cups Unsweetened Smooth Peanut Butter
    5 cups Hot Water
    1 - 2 tbsp Rock Sugar, to taste
    Recipe
    Toast black sesame in a saucepan on medium heat. Be careful not to burn the sesame. Once it is fragrant, turn off the heat.
    Put the toasted black sesame in a spice grinder or blender to grind into a fine powder.
    Pour in the water, black sesame powder, and peanut butter in a pot on medium heat. Keep stirring to combine.
    Add a knob of rock sugar or 1-2 tbsp of white sugar (to your preference) to the pot. Keep cooking the mixture down until the sugar is melted and the desired consistency is reached.
    Serve hot.

    I put in a few white sesame before toasting. Once the white sesame is turning brown, it's ready.

    According to my mum, toasting the sesame is not essential but is more aromatic. She prefers the un-toasted version as it is supposedly more healthy. As with everything food related.. personal preferences differ for lots of people. My childhood memory of this is the black sesame paste is silky smooth, I have tried making this many many years ago using more traditional methods... it was messy and a lot of work.
    I’m not sure if I would like the grainier version with the peanut butter, may conflict with my childhood memories hahaha. But I’m sure many others would love it... I have seen in some Chinese dessert places where the offer a mix of peanut and black sesame paste.
    A couple of tricks I learnt from my late grandmother.. you can add a small amount of white sesame in with the black to check the browning on the white sesame as a guide for the black sesame.
    My grandma used the chinese brown sugar (in the block form) as it has a richer caramel flavour.

      These are great tips. Thanks for sharing!! I think the black sesame and peanut butter can still be smooth as long as you make the black sesame super fine and use smooth peanut butter.

    How many tablespoon rice to add in the dessert?

      Hmmm. I don't think we used rice in this version. We replaced it with peanut butter for a quick hack.

    How in the world is the 'easiest' version of the dish? The typical recipe is already so simple. It feels like you guys overcomplicated the whole thing extra blending steps and peanut butter. If you're trying to skip the rice soak (which really only takes an hour or more)... the real hack is simply glutinous rice flour.
