WOW! That was an impressive sighting. These guys camouflage so well that I'm surprised you didn't just swim past it. Then you saw it swim and got more terrific footage. Well done!
We are not 100% certain but the most likely explanation is similar to mobbing observed in birds. When some birds, e.g. crows, spot a hawk, they will fly towards it and "mob" it thereby giving away it's presence and alerting other crows about danger. Perhaps fish perform a similar behavior following and almost mobbing the stone fish to give away its otherwise perfectly camouflaged presence.

That's risky as hell considering how fast they can catch and swallow fish...
