Salt n Straw is just delicious. I made their base and its awesome! I really wanted to ask the experts why they dont use egg yolks to emulsify the ice cream in their standard base? And would the base be better with yolk?
In another video he said that the base should have a very clean flavor, which doesn't happen when you use eggs.

Im interested in hearing Tarek when he explained how to make carrot cake ice cream.. But sadly that lady cut it off. 😭
