Peach cobbler 🍑

- Ingredients
- 10-12 peaches, peeled and sliced
- 100g sugar
- Juice of 1 lemon
- 1 tbsp cornflour
- 200g plain flour
- 80g brown sugar
- 1 tsp baking powder
- 1/2 tsp bicarb soda
- Pinch salt
- 100g unsalted butter
- 125g sour cream
- Ice cream to serve
Method
1. Start by placing the sliced peaches into a skillet (or fry pan that can go into the oven).
2. Add the lemon juice and 100g sugar, stir and set aside.
3. For the batter, mix flour, brown sugar, baking powder, bicarb soda and a pinch of salt.
4. Then, mix in the butter until you get a sandy consistency.
5. Mix through the sour cream and set aside.
6. Place the peaches on the heat and cook for 5 minutes or until they start to soften.
7. Stir through the cornflour and take off the heat.
8. Place the batter evenly on top of the peaches.
9. Place the whole skillet into a 200°c oven and cook for 20-25 minutes or until golden brown.
10. Serve with ice cream and enjoy!

Oh that's different from my recipe. For mine the crust is more like a thick batter that you pour over the peaches. And when you bake it in the oven it creates a crust. It's such an easy dessert to make and can be made with fresh or canned peaches. But yours also looks delicious!

I made it today ! Everyone loved it ! (I was worried that it would be too much sugar but it didn’t taste too sweet, it was perfect) I left the skin on for the peaches. I only used 6 peaches, it was enough for my skillet. Thank you Chef !

In the South this is a crisp, but it looks very tasty. Cobblers here need two things pie crust and lots of thick sugary juice from the fruit.
I was taught the "dump" style simpler version....canned peaches 1 cup sugar 1 cup flour(cake mix can substitute) 1cup butter....mix peaches and sugar then add to pan....sprinkle on the flour...then evenly space butter randomly on top....bake 30-45 minutes or until topping reaches desired level of browning

We LOVE peach cobbler here in the US ... may I ask one question? Why do you peel your peaches that way? I usually dunk mine in boiling water and then slip the skins off.

Learned another fruit recipe. Never knew you can prepare peaches that way.
A couple personal shortcuts I use to make the cobbler easier - blanch the peaches and the skin falls right off - no peeling! And instead of cutting in the butter, I chill mine then grate it into the flour using the large side of a cheese grater. Nice small, even pieces, barely any work!

I live in Georgia USA which is known as the peach State... It is my informed decision as somebody who's eating more peaches and picked more peaches then most people, those peaches are not ripe.

That looks so good! Looks like (what *I* would call) a peach crumble. Here in the American south a cobbler is more like a cake batter gently poured over the peaches in syrup. With more pats of butter cut over right before cooking. The edges get crispy brown and that’s the best part.
