Golden Syrup is a light treacle. Many countries have access to clear corn syrup which is great for modelling chocolate, however it is not readily available in some countries where Golden Syrup is easier to find. If you have clear corn syrup, use 100g to 300g chocolate.
You did not show from the start how to make the rose flower.

thank you for the simple recipe. i have a question. Can i make figures like hearts etc with this modelling chocolate and pour it in gelatin for a jello cake ?

Does it make difference if we use pure white choc or compound ? Because someone told me, i forgot which one, one of them(the white choc) have oil in it.
